The recipe for aioli is simple (it's just your old basic home-made mayonnaise with fresh garlic added). The key to a great-tasting aioli is the freshness of ingredients. For this particular sauce, I strongly recommend that you get farm-fresh eggs, and get them the same day you make the aioli. I also recommend using unfiltered olive oil (filtered kinds, even the "extra-virgin" category, no longer retain that wonderful aroma of olives); good unfiltered oil should be opaque and slightly greenish. Another hint: if you've never made mayonnaise at home, it would be good for you to know that ordinary "cup" blenders are not suitable for it. Because an extended period of sustained beating is involved, cup blenders overheat and cook the eggs, effectively making an omelette. What you want is a standard beater or a cup beater -- anything which does not allow heated parts to come in contact with the sauce. Now the recipe.
1 large egg
1 cup of olive oil
1 tbsp freshly squeezed lemon juice
5 garlic cloves, pressed
salt to taste
pinch of ground cayenne pepper
Beat the egg with garlic until slightly foamy. While beating vigorously, veeeeery sloooowly add 1/2 of olive oil in tiny droplets. Beat in lemon juice, and then similarly continue adding the remaining oil. The mixture should emulsify and not be runny.
Transfer the aioli to a chilled bowl and season with salt and cayenne. Refrigerate for a couple of hours before serving.
Well, I personally hope you're not putting aioli on your filet mignon as it's such a nice cut of meat and I can't imagine putting mayonaise on it (which is what aioli is). Why not try something on the side?
