It's really hot over here. I have vanilla ice cream, rasberries and blackberries. Does anyone have a cool recipe?


Answers:
Serve the berries over the icecream. If you have poundcake or sponge cake add it as a base or cube it like a parfait.
Add some granola to the fruit and ice cream.

Two-Berry Parfait
"Sour cream and ice cream complement the raspberries and blackberries in these pretty parfaits."
2 servings
INGREDIENTS
1 1/4 cups fresh raspberries, divided
1 tablespoon sugar
1 1/2 teaspoons cornstarch
1/2 cup sliced fresh blackberries
1/2 teaspoon lemon juice
1 cup vanilla ice cream
1/4 cup sour cream
DIRECTIONS
Mash 1 cup raspberries and press through a strainer. Reserve enough juice to measure 1/4 cup. Discard seeds and pulp. In a small saucepan, combine sugar and cornstarch; stir in reserved juice until smooth. Cook over low heat until mixture comes to a boil; cook and stir for 1 minute or until thickened. Remove from the heat; stir in remaining raspberries and blackberries ; cool.
In 2 parfait glasses, layer half the ice cream, a fourth of the berry sauce, half the sour cream and a fourth of the berry sauce. Repeat layers.

Berries 'n' Cream Dessert

INGREDIENTS
3/4 cup sour cream
1/3 cup packed brown sugar
1 cup vanilla ice cream
3/4 cup whipping cream
1 tablespoon sugar
1/2 teaspoon vanilla extract
3 cups fresh raspberries
DIRECTIONS
In a bowl, whisk the sour cream and brown sugar. Stir in ice cream. Refrigerate. In a chilled mixing bowl, beat whipping cream until it begins to thicken. Add sugar and vanilla; beat until stiff peaks form and sugar is dissolved. Fold in sour cream mixture and berries. Pour into serving dishes. Serve immediately or refrigerate.

Just mash the berries slightly with a bit of sugar and serve them over the ice cream for great sundaes!

Or throw it all in the blender for an amazing shake.

raspberry or blackberry coulis

1/2 cup sugar
3 tablespoons water
1 lb fresh raspberries, thawed or 1 (12 ounce) bag frozen raspberries, thawed
ice cream

Heat the sugar and water in a small saucepan over medium heat, stirring from time to time, until the sugar dissolves completely, about 5 minutes.
Put the raspberies and the sugar syrup in a blender and puree.
Strain through a fine mesh sieve to remove the seeds and stir in the ice cream.

You have the makings for a perfect hot weather snack! Here's some things to try with that vanilla ice cream:

1. Mash berries slightly and mix with sugar and a little aged balsamic vinegar (it gets sweeter as it ages and compliments fruit perfectly!)
2. Mix sweetened berries with a little Chambord or Raspberry Liquor for an extra kick.
3. Blend raspberries and blackberries with slightly softened vanilla ice cream and refreeze
4. Blend berries with brown sugar, heat, add a little butter and serve warm over ice cream.
5. Make berry milkshakes or smoothies! Add a little sparkling water to your mix for some added refreshment.

Make an ice cream parfait! Get a tall glass and put a scoop of ice cream in the bottom. Put in a layer of raspberries, then a scoop of ice cream, then a layer of blackberries, another scoop of ice cream, and so on! Top with a perfect pair of berries (one of each) and a lovely mint leaf.
