What's the recipe for swiss chalet's rice pilaf?


Answers:
I don't know the swiss chalet-there is one here in upstate NY, but I can give you a great recipe.
2 T butter
1/4 c diced celery
1/4 c diced onion
1/2 c orzo
1 c white rice
2 1/2 c chicken stock(preferably from base or the boxed pre made)
1 bay leaf
dash white pepper(don't omit)
pinch nutmeg

Melt butter in medium saucepan
saute the onions and celery about 2 minutes over medium high heat, until soft-DO NOT BROWN.

Add orzo and rice. stir for about 2-3 minutes until orzo starts to turn golden.

Add stock, rest of ingredients-this will quickly boil up especially on the sides of the pan-will settle just as quick, do not be alarmed. Reduce to simmer, cover and cook for 20 minutes.DON'T PEEK! After 20 min, check. If most of stock is absorbed, turn off heat, leave covered for about 5 minutes. Fluff with fork and serve.
