Just boil cauliflower, and add butter, salt and pepper! It is really simple, yet very tasty! To know it is cooked, just take it out with a fork, and nibble it. If is is soft, but not TOO soft, and not crunchy, it is done. =]

you can steam it in the micro then add butter and milk and mash together like you would if you were making mashed potatoes. I thought it sounded gross when I first heard this recipe but MAN is it good.
Rinse it under cold running water. Cut it into bite sized pieces and set aside.
Fill a skillet about half full with water and then cover the skillet with aluminum foil. Poke a few holes in the foil to allow steam through and place the cauliflower on top. Heat over the stove and cook until tender.
I like to toss mine with a little butter and parm. Yum!

Personally I like to eat cauliflower (and brocolli) raw with a dip, however, when I cook it I use a steamer. Another good way to use cauliflower is to steam it til it is somewhat soft, remove it from the steamer, mash it with a potato masher and serve it like mashed potatoes. I like to add a bit of butter and cream to it first, but any spice is OK.

in a large pan
fry one head of steamed or boiled cauliflower
and one package of Stove Top Stuffing.
with just a bit of vegetable oil.

-Cut the cauliflower in to medium size pieces. Boil for five minutes. Take out and place in to t greased baking dish.
-Melt one spoonful of butter and add two spoon fulls of flour. Cook until the flour looks like it is foaming. Approx. 2 minutes. start adding milk and stirring. When it boils it will start getting ticker. You may want to add more milk until it the sauce becomes rather thick but still creamy. Don't forget to add little salt and same amount of sugar to it with the milk. This is called a basic beshamelle sauce. ( not sure about the spelling though)
-Pour the sauce on top of the cauliflowers, put some mozzarella cheese on top and bake until the cheese becomes golden.
It makes a great side dish for grilled meat or chicken as well as a main dish by itself.
Baked Cauliflower
(makes 4-6 servings)
1 whole head cauliflower
2-3 tablespoons butter, melted
1/2 cup seasoned bread crumbs
1/4 cup Parmesan cheese
garlic powder to taste (start with about 1/8 teaspoon the first time you make this and adjust to your family's tastes)
Wash cauliflower and remove any leaves. Remove enough of the center stem to allow the head to sit level in a baking pan.
Steam whole cauliflower for 20 minutes. While steaming, preheat oven to 350 F. Also, mix bread crumbs, cheese and garlic powder in a small bowl. Melt butter.
When the cauliflower has steamed, place in baking pan stem side down and brush with butter. Sprinkle with bread crumb mixture.
Bake at 350F for 20 minutes, or until cauliflower is soft when pierced in the center and the outside is golden brown.
Baked Macaroni and Cheese With Cauliflower and Ham:

2 servings
2 cups cauliflower florets
1/4 lb elbow macaroni
1/4-2 cup minced onions
1 tablespoon butter, plus
2 teaspoons butter
1 tablespoon all-purpose flour
1 cup milk
1/2 cup cream
1 pinch nutmeg
1 tablespoon worcestershire sauce
2 tablespoons ketchup
1/2 teaspoon mustard powder
1/8 teaspoon cayenne pepper
6 ounces coarsely grated sharp cheddar cheese
1/3 cup grated parmesan cheese
1 pinch nutmeg
3/4 cup diced ham, good quality
1/2 cup dry breadcrumbs
1. Blanch cauliflower for 5 minutes.
2. Refresh under cold water; drain well.
3. Cook pasta until al dente.
4. Refresh under cold water; drain well.
5. Cook onion in 1 tblsp butter over moderately-low heat until softened; stir in flour and cook 2 minutes.
6. Whisk in milk, cream, Worcestershire Sauce, ketchup, mustard powder, cayenne pepper and nutmeg and bring just to a boil, stirring, and simmer for 3 minutes.
7. Preheat oven to 350F and place rack in center of oven.
8. Add 1 cup of Cheddar and all of the Parmesan, stirring, until completely melted.
9. Stir in macaroni, cauliflower and ham and season.
10. Mound into prepared baking dish and top with remaining Cheddar.
11. Toss breadcrumbs with remaining 2 tsps butter (melted) and sprinkle over cheese.
12. Bake for 25 minutes, or until topping is golden.
I love cauliflower, but my husband doesn't like it, so I only make it when he's out of town!
I have a metal steamer basket that sits in a pan on the stove that I use all the time. Cauliflower is so easy... just wash it and cut into smaller pieces. Place in the steamer basket and bring the water to a boil. Steam for about 15-20 minutes.
I love to put butter, parmesan cheese, and lemon pepper on my cauliflower. It's delicious!

Roasted cauliflower
1 medium head cauliflower cut into 1 1/2 florets
2 tablespoons extra-virgin olive oil
1/4 teaspoon salt
Put oven rack in middle and preheat oven to 450 degrees F
toss cauliflower with oil and salt.
Spread in large shallow baking pan and roast, turning occasionally, until tender and golden brown, 25-35 minutes.
Roasting in a hot oven concentrates their natural sweetness.
