Charley's Slow Cooker Mexican Style Meat
This recipe can be used with chicken, beef, pork and even venison. It freezes well, and can be made into burritos, tacos, or any number of other Mexican-style dishes. This dish uses a lot of spice, so please be sure to adjust to your taste.
1 (4 pound) chuck roast
1 tsp salt
1 tsp ground black pepper
2 Tbs olive oil
1 large onion, chopped
1 1/4 cups diced green chile pepper
1 tsp chili powder
1 tsp ground cayenne pepper
1 (5 ounce) bottle hot pepper sauce
1 tsp garlic powder
1 Trim the roast of any excess fat, and season with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Place meat in hot skillet, and brown meat quickly on all sides.
2 Transfer the roast to a slow cooker, and sprinkle onion over meat. Season with chile peppers, chili powder, cayenne pepper, hot pepper sauce, and garlic powder. Add enough water to cover 1/3 of the roast.
3 Cover, and cook on High for 6 hours, checking to make sure there is always at least a small amount of liquid in the bottom. Reduce heat to Low, and continue cooking for 2 to 4 hours, or until meat is totally tender and falls apart.

Easy Slow Cooker French Dip
This makes a delicious French dip sandwich, perfect for the working mom! Nobody, not even teetotalers, have been able to detect the presence of beer in this recipe, but it adds a wonderful flavor! French fries make a great side dish, and they are good for dipping, too.
4 lbs rump roast
1 (10.5 ounce) can beef broth
1 (10.5 ounce) can condensed French onion soup
1 (12 fluid ounce) can or bottle beer
6 French rolls
2 Tbs butter
1 Trim excess fat from the rump roast, and place in a slow cooker. Add the beef broth, onion soup and beer. Cook on Low setting for 7 hours.
2 Preheat oven to 350 degrees F (175 degrees C).
3 Split French rolls, and spread with butter. Bake 10 minutes, or until heated through.
4 Slice the meat on the diagonal, and place on the rolls. Serve the sauce for dipping.
Servings: 9

Corned Beef and Cabbage! Man it's so easy, it's one of my fav things to make too. SO man compliments and all I had to do was cut up veggies and put them in water for a couple hours. I put everything in serving bowls before guests show up and hide the crock pot. :) You can also get a lot of recipes from crock-pots website

Braised Short Ribs (crock Pot)
3-4 lbs short rib of beef
1/2 cup flour
1 1/2 teaspoons paprika
1 1/2 teaspoons salt
1/2 teaspoon dry mustard
2 medium onions, sliced
1 garlic clove, chopped
1 cup beer or beef broth or water
2 tablespoons flour
3 tablespoons water


1. Place ribs on broiler rack and brown to remove fat. Drain well.
2. Combine 1/2 cup flour with paprika, salt and dry mustard. Toss with ribs.
3. Place remaining ingredients (except 2 TBSPS flour and 2 TBSPS water) in Crock Pot.
4. Stir to mix ribs with onion rings -- be sure the onions are under the ribs, not on top.
5. Cover and cook LOW 8-12 hours.
6. Remove the ribs to warm serving platter. Make a smooth past of the flour and water. Turn Crock Pot to HIGH and stir in paste. Cover and cook until gravy is thickened.

Garlic Garlic Spicy Shredded Pork


Ingredients
2 lbs. boneless sirloin pork roast
2 Tbsp. Garlic Garlic?
2 Tbsp. Fiesta Party Dip Mix?
2 cups beef or chicken broth

Directions
Combine all ingredients in slow cooker. Cook on low for 8-10 hours or high for 4-5 hours. Cool meat in juices; drain and shred. Use pork for enchilada, taco or burrito filling. Excellent added to chili or to top nachos. Add Sweet Southern BBQ Sauce? for pork sandwiches. Makes 6-8 servings.
