Ricotta Cheese: creative ideas?

I have a cup or so of ricotta cheese left after using it in a recipe. Any creative ideas or recipes for what else I can do with it?


Answers:
If you're feeling fancy, you could make some fresh pasta and make ravioli. Add some salt and pepper to the ricotta, a little egg yolk, some fresh chopped basil and some ham or whatever else you like. Serve with tomato sauce. Yum. Make some crepes for breakfast. Mix the ricotta with icing sugar, a little orange zest and vanilla and some drained chopped tinned peaches. Mix it all up, fill and roll. Double yum.

mix in a cup of confectioners sugar or less to taste and a teaspoon of vanilla to the ricotta. put in the fridge. You can top off cupcakes or brownies with it and sprinkle some cocoa ontop. Ive filled ice cream cones with it also.

Turkey Burgers
Combine 1 1/4 lb. ground turkey; 1/2 c. fat-free ricotta cheese; 2 scallions, finely chopped; 2 garlic cloves, minced, 2 tsp. Dijon mustard; 1 tst. Worcestershire sauce; 1/4 tsp. salt, and 1/4 tsp. freshly ground pepper in a bowl just until blended. Shape into four patties. Spray a grill rack with nonstick spray and grill the burgers, or sear on both sides in olive oil and cook for 15 min. in a skillet. Very moist and delicious!

I like adding a little icing sugar and lemon zest and spread it on crakers. Yummy

got a food processor? blend your left over ricotta with a little sugar (to taste, or splenda in my case) a 1/2 tsp. (NO MORE) of vanilla extract, a 1/2 tsp. of cinnamon, and 1/4 cup of a berry fruit of your choice. eat as is or scoop onto graham crackers. sooooo good.

you could make ravioli. You can buy fresh pasta in sheets at the grocery store or even use won ton wraps and stuff them with a spoonful of ricotta mixed with whatever you want ( perhaps spinach, nuts, sundried tomato, or mushroom & onion) and just cook in hot water. You can make tomato sauce or toss in olive oil with salt & pepper.

a cup of ricotta will go a long way in ravioli- you could probably make enough for dinner for two and if you don't use it right away, you can make them and freeze (before you boil them)
