How do I flatten the shrimp for shrimp tempura rolls?

I've made tempura shrimp before. Are there any techniques for getting them to lay flat when you roll them? Do you try to flatten them before or after battering and frying them?


Answers:
You have to flatten them before you cook, make some small cuts on the vains and stomach to break the muscle, cover with plastic wrap, then squizz the shrimp to make it longer but not broken. It won't roll up then.

You can get them to lie flat by butterflying them. Then dunk them in the tempura batter and fry to a golden brown. Sounds tasty.

Split the shrimps almost in half lengthwise (known as butterflying) the shrimp before you coat and deef fry.
