This recipe has tons of variations, sorry it's so long, but it really is one of the very best I Hope you enjoy it!

BEST MEATLOAF

BASIC MIX:

1 1/2 pounds ground beef
1 c. fresh Italian style bread crumbs
1/4 cup fresh parsley, chopped
3-4 cloves garlic, finely minced
1 large onion, finely chopped
1 large green bell pepper, chopped
1 egg
1 1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon pepper
1 8 oz can tomato sauce
1 cup ketchup
1/2 cup water or beef stock (can use bouillon)
3 tbsp. Balsamic vinegar
3 tbsp. brown sugar
2 tbsp. Dijon mustard
2 tsp. Worcestershire sauce
1/4 c. Parmesan, grated (optional)

In a small bowl, combine tomato sauce, ketchup, Balsamic vinegar, brown sugar, Dijon mustard, Worcestershire sauce, and water/beef stock.
In a large bowl, combine beef, bread crumbs, onions, green bell pepper, parsley, chopped garlic, egg, seasonings, 3/4 cup of tomato mixture, and optionally, Parmesan cheese.

Form into loaf. Place into shallow 7 by 10 in. pan or bread loaf tin, lightly oiled. Pour remaining liquid over meat loaf to coat. Bake in a 350 degrees Fahrenheit oven for one hour and 15 minutes, basting occasionally with ketchup or your favorite barbecue sauce.


Optional Variations:

Choose one:
1. Eliminate salt, bouillon, and substitute 3 tablespoon onion soup mix. Sprinkle top with tomato soup and crushed crackers instead.

2. Use old-fashioned rolled oats instead of bread crumbs.

3. If you have leftover bread, especially Italian or French bread, substitute milk for the water listed in recipe, and soak about 2 cups bread in the milk prior to mixing into the meat mixture. Squeeze out the excess slightly before adding. Substitute this bread for the bread crumbs. After mixing everything together, you can also form this meat mixture into meatballs and fry in 1/2 inch olive oil in a heavy bottom skillet (such as cast iron). If making Italian meatballs, leave out the brown sugar and Dijon mustard, but be sure to use the Parmesan cheese. Season the oil in the pan with 2-3 whole cloves garlic (don't chop it up or it will burn instead of just roasting).

4. If you're in a hurry, you may use as a substitute 2 cups of barbecue sauce and eliminate the following ingredients:


1 c. ketchup
1 8 oz can tomato sauce
3 tbsp. balsamic vinegar
3 tbsp. of brown sugar
2 tbsp. Dijon mustard
2 tsp. Worcestershire sauce


5. Eliminate the sauté crumbs. Sauté this mixture with onion and garlic for 5 minutes and layer a casserole with no-cook lasagna noodles. Place meat mixture to cover noodles. Add a sprinkling of Parmesan cheese and:

1/3 pound ricotta mixed with one egg
1/4 c. freshly chopped Italian parsley or 1 c. fresh spinach
1/2 pound grated mozzarella cheese


Cover with another layer of noodles, and top with 1 large can of tomato sauce mixed with 1/2 teaspoon each basil and oregano. Place in 325 degree oven 60 minutes or until bubbly, basting occasionally with sauce to prevent lasagna from drying out.
6. Form meat mixture into large doughnut shapes, approximately 6-7 inches across. When forming the doughnut, don't allow the center to actually become a doughnut hole; just thin it out, leaving a well in the center. Optionally, brush with ketchup. Crush 8-10 Saltine or Ritz crackers into crumbs and sprinkle over the doughnut shaped burger, concentrating the excess crumbs into the center. Sprinkle with onion and garlic powder and a liberal dose of soy sauce, allowing a 1/2 spoon or so to form in the well. This can optionally be topped with cheese and canned mushrooms if desired. Place in microwave and cook on high for 3 minutes or so, according to size, until the juices run clear and meat doughnut is done. Served with meat drippings as topping, there is no need for a bun. This is a fast and easy low-carb lunch!

7. Place 3-4 strips of bacon lengthwise along the top of the meatloaf. Garnish with rings of green or red bell pepper and bake as usual. 8. Use your imagination, get creative, and enjoy!

1 cup milk
1 tablespoon Worcestershire sauce
1 teaspoon chopped fresh sage leaves or 1/4 teaspoon dried sage leaves
1/2 teaspoon salt
1/2 teaspoon ground mustard
1/4 teaspoon pepper
1 garlic clove, finely chopped or 1/8 teaspoon garlic powder
1 egg
3 slices bread, torn into small pieces
1 small onion, chopped (1/4 cup)
1/2 cup ketchup, chili sauce or barbecue sauce


1. Heat oven to 350°F.
2. Mix all ingredients except ketchup. Spread mixture in ungreased loaf pan, 8 1/2x4 1/2x2 1/2 or 9x5x3 inches, or shape into 9x5-inch loaf in ungreased rectangular pan, 13x9x2 inches. Spread ketchup over top.
3. Insert meat thermometer so tip is in center of loaf. Bake uncovered 1 hour to 1 hour 15 minutes or until thermometer reads 160°F.

1 pound hamburger
1 egg
about a handful of oatmeal or saltine crumbs
some crushed red pepper (to your taste)
some italian seasoning

mix the meat, egg and oatmeal. sprinkle desired amount of red pepper. place in loaf pan and prinkle top with italian seasoning.

bake at 350*F for about an hour.

This is a good one to try

MEATLOAF

1/2 cup bread crumbs
2/3 cup milk
1 beaten egg
2 tbsp. onion salt ( Can use real diced onion to taste)
1/2 tsp salt
1/4 tsp pepper
1/4 tsp dry mustard
1/4 tsp celary salt
ketchup
Mix bread crumbs,milk and beaten egg with 2 lbs. ground beef ( I use lean ground beef)
add the onion,salt.pepper mustard and celary salt.Mix well
Cover the top with the ketchup

Bake at 350degrees for apprx.1 1/2 hours

*Old-Fashioned Meat Loaf

Ingredients
2 beaten eggs
1/4 cup tomato paste
2 teaspoons Kitchen Bouquet
3/4 teaspoon seasoned salt
1/2 cup finely chopped green pepper
1/2 cup finely chopped celery
1/2 cup finely chopped onion
1-1/2 pounds ground beef
1 cup plain croutons
3/4 teaspoon black pepper

Directions
1. In a mixing bowl, combine eggs, tomato paste, Kitchen Bouquet, salt, and black pepper. Stir in chopped green pepper, celery, and onion. Add the ground beef and croutons; mix well.
2. In a shallow baking pan, form meat mixture into a loaf (about 9x4 inches). Cover loosely with foil.
3. Bake in a 350 degree F oven for 55 to 65 minutes or until internal temperature reaches 160 degree F. Makes 6 servings.


*Meatloaf with Roasted Tomato Sauce

Ingredients
1 tablespoon olive oil
1 cup chopped onions
1/2 cup chopped celery
2 teaspoons chopped garlic
1 teaspoon salt, divided
1 tablespoon chopped fresh flat-leaf parsley
2-3/4 pounds unseasoned meatloaf mix (ground beef, pork and veal) or ground beef round
3/4 cup fresh bread crumbs (2 slices firm white sandwich bread)
1/3 cup ketchup
2 large eggs
1/4 teaspoon ground nutmeg
4 slices bacon
1 28-ounce can plum tomatoes in juice
1 tablespoon olive oil
1 large garlic clove, chopped
1/4 teaspoon salt
1/4 teaspoon red pepper flakes

Directions
1. Arrange rack on lowest position in oven. Heat oven to 350 degrees F. Heat 1 tablespoon oil in a large skillet over medium heat. Add onions, celery and 2 teaspoons garlic; cook 5 minutes, until vegetables soften. Stir in 1/2 teaspoon of the salt and the parsley. Remove from heat and let stand until cooled to room temperature.
2. Combine meatloaf mix, bread crumbs, ketchup, eggs, remaining 1/2 teaspoon salt, nutmeg and the cooked vegetables until blended. Transfer mixture to a shallow pan; shape into a 9-1/2x5-inch oval. Arrange bacon slices on top. Bake 70 minutes, until an instant-read meat thermometer inserted in center registers 160 degree F.
3. Meanwhile, combine tomatoes, 1 tablespoon oil, 1 clove garlic, 1/4 teaspoon salt and the pepper flakes in a 9-inch glass baking dish, breaking up tomatoes with a spoon. Bake on lower rack with meatloaf, 35 to 40 minutes, until sauce thickens. Serve with meatloaf. Makes 6 servings.

combine 1lb of chopped beef with 1 egg, 4 slices bread cubed, 2 tablespoons ketchup, 1/3 cup milk, 1 small chopped onion, 1/2 tsp. salt, 1/2 tsp pepper and 1/2 oregano together in a large mixing bowl. mix with hands until just combined or it will be tough. next place in a loaf pan, and bake at 375 degrees f. for 45 minutes. during the last 10 minutes of baking, cover with a tomato sauce or a brown gravy. serve with salad and rice or mash.

TAKE 2 PDS OF GROUND BEEF,SHRED 1 1/2 ONION,SALT,PEPPER 2 MINCED GARLIC,SOAK 2 SLICES OF BREAD IN WATER THEN DRAIN WHEN SOFT,,1 EGG,AND A BUNCH OF PARSLEY CHOPPED SMALL,COMBINE ALL TOGETHER AND FORM IN TO A LOAF AND BAKE FOR 40 MINUTES AT 350.WITH DRIPPINGS FROM PAN MAKE A GRAVY,NAMASTE

My Favorite Meatloaf

Serves:8
Ingredients
1-1/2 lbs (.7 kg). ground beef
1 cup (225 ml) tomato juice
3/4 cup (175 ml) Quaker oats (quick or Old Fashioned, uncooked)
1 egg, beaten
1/4 cup (60 ml) chopped onion
1 tsp (5 ml) salt
1/4 tsp (1 ml) pepper
Preparation
Heat oven to 350 degrees (175 C.).
Combine all ingredients and mix well.
Press firmly into ungreased 8 X 4-inch loaf pan (A little cooking spray here wouldn't hurt).
Bake about 1 hour.
Let stand 5 minutes before slicing.

Meatloaf is so wonderful. This is how I do it, but everyone has their own way.

1 pound of Ground Chuck
1/2 pound of Ground Sirloin
1/2 pound of Ground Pork (not sausage)
1 Cup cracker crumbs
2 eggs
1/2 small can of tomato paste
salt, pepper, garlic powder to taste.

I put it all in a big bowl and mix it with my hands for about 5 minutes - the longer you mix it the more creamy it will be.

Take it out of the bowl and form a loaf. Slam the loaf on the counter a couple of times to collapse any weak spots or air pockets.

Put in a roasting pan and spread the rest of the can of tomato paste on the top.

Bake for about 1/12 hours on 325. Keep covered with foil for the first hour, then uncover to allow the tomato paste on top to get toasty.
