An even easier Chicken Fettucini Alfredo:

Buy a jar of Classico Alfredo sauce.
Cube 2 chicken breasts and cook the cubes.
Add the cooked chicken to the heated sauce.
Pour over cooked fettucini.

Serve with some garlic bread (bought uncooked at the grocery store, already prepared, or buy a french stick and a tub of garlic butter and make your own.)

Add some salad (basic: lettuce, a few cucumber slices, tomato slices, add salad dressing of your choice)

ok so try hamburger helper with a fresh salad, buttered bread, and ice cream for dessert. try bob evans foods in the freezer section at your local grocers.

CHICKEN FETTUCCINE

1 stick butter
2 lbs boneless, skinless chicken breast
1 cup half and half or cream
1/3 cup Parmesan cheese
1/4 cup green onions, chopped
2 cloves garlic, minced
1 T lemon juice

Melt butter in skillet and saute chicken which has been cut into 2 inch chunks. When chicken begins to take on color, add garlic and green onions.
Add remaining ingredients except lemon juice, cover and simmer over low heat until mixture thickens and chicken is tender.

Serve over cooked and drained fettuccine. Sprinkle with lemon juice and additional Parmesan cheese if desired.

ORANGE DREAM CAKE

1 pkg yellow cake mix
3/4 cup Miracle Whip
1 pkg Dream Whip
3/4 cups orange juice
3 eggs
2 tsp grated orange zest

Preheat oven to 350°F.
Combine the Miracle Whip, Dream Whip, cake mix, orange juice, beaten eggs and orange zest with electric mixer at medium speed for 2 minutes.

Pour into a greased and floured 10" bundt pan.

Bake 35-40 minutes or until a toothpick inserted in the center of the cake comes out nearly clean. Cool 10-15 minutes, loosen sides with a blunt knife and remove from pan.

Cool completely. Stir together 1 1/2 cups 10X sugar (confectioners) with 2-3 tablespoons of milk and drizzle over cooled cake. Sprinkle top with coconut if desired.

You don't say if you want hot or cold... lunch? Anyway, here's easy...

Heat a skillet with 1/2 cube butter (not margarine!!!), throw in boneless, skinless chicken breast pieces to cover the bottom of the pan. Cook on med high until light brown on that side, then turn over and do the same. The butter should be just about gone by now. Dump about 3/4 cup white wine, the cheaper and sweeter the better over it all, cover and cook on medium until the wine is pretty well gone. You should have a nice crispy crust formed out of the sugars in the wine and the butter. It's yummy as is, but if you wanted to put pepper and some chopped garlic in while browning, that's ok, too.

Here's a twisted, but exciting dessert I did as a kid....

Get Hostess cupcakes and cut them into about 4 pieces. Alternate scoops of peppermint ice cream and hunk s of cupcakes in an angel food cake pan, pressing down to take up air pockets. It's probably 1/2 gal of ice cream and 4-6 cupcakes. Freeze for at least 1 hour to harden. Take out and dip the pan's outside in hot water to loosen the cake. Flip it out on a plate and slice and top with whipped cream. Or just scoop it out.

Apple dumpling

DINNER MENU

Fried chicken, white sauce, buttermilk biscuits, spinach, fruit.

Fried Chicken

Cut up several pieces of chicken (as much as you are planning to eat) into strips. I use chicken breasts and cut them in about half inch thick slices. Always cut against the grain of the meat, to make it tenderer. In a small bowl mix a small amount of flour with salt and pepper to taste--maybe about 1/2 teaspoon salt to every half cup of flour, and as much black pepper as you like. Dip the pieces of chicken in the flour mixture until they are all covered. Put a few tablespoons of oil in a large frying pan and heat it over medium to low heat. The pan is just hot enough when you can see the the first tiny bit of smoke rising of from the oil. Keep it at that temperature and fry the floured chicken on it. If the the chicken begins to stick to the pan, add more oil. Serve hot with white sauce.

White Sauce

White sauce is an essential thing to learn. It is the basis of many things, including creme soups, and different sauces. Plain white sauce, is good on fried chicken as well. The main point of learning to make a white sauce is to learn to use flour as a thickening agent. The white sauce can be make thicker or thinner by adding more or less flour.

2 tablespoons butter
2 tablespoons flour
1 cup milk
1/4 teaspoon salt
A few gains pepper

In a small saucepan melt butter and mix with flour, salt, and pepper. Pour on milk gradually, mixing constantly. Cook over medium heat, and, stirring constantly, bring to a boil. This may take a while. When you see the first bubble, set the timer for 2 minutes, and let boil for 2 minutes, all the while stirring constantly.
If you add grated cheddar, or other strongly flavored cheese to this sauce while it is cooking, you can make a good cheese sauce to put on broccoli or other dark green vegetable. Also good on cauliflower.

Buttermilk Biscuits

An excellent quick bread. The key is not to knead or handle the dough more than you have too.

1 3/4 cups flour
1 tsp salt
2 tsp baking powder
1 tsp sugar
1/2 tsp soda
5 tablespoons oil
2/3 to 3/4 cup buttermilk

Before you start, check the buttermilk to make sure is not spoiled. I gotten halfway through this recipe many times only to find the buttermilk is spoiled and unusable. If you ever do this, you can substitute milk and a little bit of lemon juice. It will not taste nearly as good, but it will rise at least, and it is better than throwing away the ingredients you have already added. The reason the buttermilk is added besides the flavor is because its acidity makes a chemicals reaction with the backing soda and makes it rise.
Mix together the dry ingredient. Cut in oil. Add buttermilk and mix lightly. Knead dough lightly then roll out dough and cut with biscuit cutter. Bake for about 10 to 12 minutes on ungreased baking sheet at 450 degrees F (425 degrees convection).

Spinach (or any other leafy green)

Steam leafy greens for about 5 - 8 minutes. You can also boil them, or put them in the microwave, but if you put them in the microwave, it will detract from some of the nutritional content of the vegetable.

Fruit

To have a good balanced meal you should have something from the fruit group as well. You can eat any fruit you would like, or make a fruit salad. This is not especially hard, does not require further explaining.

DESERTS

X-tra Special Celebration Cake

3 cups flour
2 cups sugar
1/2 cup cocoa
2 tsp soda
1 tsp salt
2/3 cup oil
2 tsp vinegar
1 tsp vanilla
2 cups cold water

Grease two round 9 by 1 1/2 inch cake pans and dust with flour. Mix together oil, vinegar, and vanilla. Stir together flour mixture, water and oil mixture really hard. Pour evenly into pans and cook for about 35 minutes at 350 degrees F (250 degrees F if your using convection). Let cool for about ten minutes before removing from pans.

Mocha Butter Frosting (Frosting to go on Cake)

1/4 cup butter or margarine
2 + cups sifted confectioner sugar
1/8 teaspoon salt
3 tablespoons coffee
1 1/2 tablespoon cocoa powder
1 teaspoon vanilla

Cream butter with cocoa powder. Add some sugar, and the salt. Add additional sugar alternately with coffee until all the coffee has been used and the frosting is of a consistency that you like. If you are using margarine you will need to use more sugar to stiffen the frosting than if you were using real butter. Add vanilla.

Scotch Shortbread

1 cup butter
3/4 cup sugar
2 1/2 cup flour

Beat butter with an egg beater until fluffy, and add sugar. Blend thoroughly. Add flour and mix to make dough. Roll out dough and cut with cookie cutters. Bake on ungreased cookie sheet for about 20 to 25 minutes at 300 degrees F, or 275 degrees F if you are using a convection oven.
