Oxtail is lovely to slow cook. I flour the pieces of oxtail and fry so they get a nice colour on them and put them in the slow cooker with a large diced onion, carrot and celery.
You will need enough liquid to cover, usually about a pint into which you have stirred 2 tablespoons of tomato puree, an Oxo cube, thyme and a bay leaf. A good splash of Worcester sauce will work well and enrich the flavours.
Switch the cooker to auto and leave for at least 6 hours.

add fresh parsley, garlic, black and red peppers. and onions. a dash of oregano and some seasoned salt.and a teaspoon of sugar. simmer until meat is tender (3-5 hours)
delicious! I like to cook my oxtails in the oven and serve with some rice.

Oxtail Stew

4 pounds oxtails -- cut into 2" lengths
1/4 cup flour
salt and pepper
2 tablespoons salad oil
1 medium tomato -- peeled and chopped
1 onion -- chopped
3 carrots -- chopped
2 turnips -- chopped
1 clove garlic -- crushed
1 bay leaf
3 cups beef bouillon
1 cup port wine
1/2 teaspoon pepper
2 leeks -- sliced

Combine the oxtails and flour. Shake off excess flour. Season with salt and pepper.

Brown meat in oil in skillet. Drain. Add all ingredients to crockpot. Cover, cook on low for 7-9 hours. Remove bay leaf before serving.

Crockpot Oxtail Stew Recipe

INGREDIENTS:
3 to 4 lbs oxtails, disjointed
3 tablespoons olive oil
2 onions, chopped
2 cloves garlic, finely chopped
1 tablespoon flour
1 1/2 cups beef stock
3/4 cup dry red wine
1/2 cup tomato sauce
6 peppercorns
1/2 teaspoon dried oregano
1 dried red chile pepper, seeded, chopped
2 whole cloves
2 carrots, chopped
1 red bell pepper, chopped
1 tablespoon chopped parsley
2 potatoes, cut in chunks
salt and pepper, to taste
PREPARATION:
Brown oxtails on all sides in oil in skillet. Add onions and garlic and cook 5 minutes. Sprinkle flour over the meat, blend well and cook 2 minutes longer. Put potatoes in bottom of crockpot, along with carrots.
Add oxtails and remaining ingredients and cook on low 8-10 hours.

1 bayleaf, some parsley and a little bit of thyme would be good.
Onion, turnip carrots and leeks chopped. Some tomato puree salt and pepper, red wine and garlic if you like it . ox tail tossed in some flour and browned on all sides in a frying pan or similar. shove the lot in with enough water and cook for about 6 hours. enjoy

just use a packet its so nice a lot of packet

2 lbs oxtails
2 1/2 quarts water
6 peppercorns
2 bay leaves
2 stalks celery & leaves, roughly chopped
1 medium onion, roughly chopped
1 1/2 teaspoons salt
2 medium potatoes, cut into cubes
3 carrots or 1/2 lb baby carrots
1 cup quick-cooking barley
1 (16 ounce) can diced tomatoes
Saute celery and onions till tender.
In slow cooker, add water, oxtail, potatoes, carrots, peppercorns, bay leaves, celery, onion, and salt. If using regular barley, add at this time too.
Cover and simmer for 8- 10 hours, until meat is tender, potatoes and carrots are cooked, and barley is tender.
When meat is tender, take meat off bones and return to broth.
Bring broth to boil and add quick-cooking barley and tomatoes.
Cover and cook for 15 minutes or until barley is tender.
