what can you subsitute for an egg in cornbread?????


Answers:
There are plenty of vegan "eggs" for sale that you can use; I haven't tried them myself but I've heard that they do pretty much everything a real egg can do when it comes to baking. Because when you think about it, all an egg is doing is binding together ingredients.

You can also try tofu, flax seeds, and soy yogurt.

You can't substitute the egg or just use egg whites. The egg is what holds it all together after the liquid evaporates out or is soaked into the cornmeal.

I've tried using that Egg Beaters stuff for cornbread but it comes out crappy. Ask a neighbor if you can have one of theirs?

I do use eggs in my cornbread recipes, however I grew up eating cornbread similar to this recipe for "Hot Water Cornbread". we loved it and had it quite often...ENJOY!!!

Hot Water Cornbread

"This is a very old fashioned recipe. The cornbread is shaped into little cakes and fried, rather than baked. They are served with maple syrup over them."

Original recipe yield:
12 cakes

PREP TIME 5 Min
COOK TIME 10 Min
READY IN 15 Min

INGREDIENTS
1 cup cornmeal
1 teaspoon salt
1 teaspoon white sugar
1 tablespoon shortening
3/4 cup boiling water

DIRECTIONS
In a medium bowl, combine cornmeal, salt, and sugar. Add boiling water and shortening; stir until shortening melts.
Pour oil or bacon fat to a depth of 1/2 inch in a large skillet and heat to 375 degrees F (190 degrees C).
Shape cornmeal mixture into flattened balls using a heaping tablespoon as a measuring guide. Fry each in hot oil, turning once, until crisp and golden brown, about 5 minutes. Drain on paper towels. Serve at once with maple syrup or honey.

----------------AND HERE'S ANOTHER SIMILAR CORNBREAD...

Extremely popular in the southern United States, corn pone is an eggless cornbread that is shaped into small ovals and fried or baked.


Corn Pone

2 cups white corn meal
1 teaspoon salt
1 1/2 cups cold water (or enough to make a soft mixture that can be spooned like pancake batter)
4 tablespoons vegetable oil

Preheat oven to 475*F (245*C).

Mix corn meal, salt and water.
Heat oil in a 9-inch round iron skillet in the hot oven until hot.
Carefully spread mixture evenly in hot skillet and spoon some of the fat that comes to the edges up on top of the batter.
Bake for about 15 minutes or until golden brown. Broil for the last 2 to 3 minutes
to make it extra golden brown and crispy around the edges.
Makes 8 servings.

----------------AND, LASTLY...HEEERRREEE'S DOLLY'S..

Dolly Parton's Corn Pone

2 cups cornmeal
1 teaspoon salt
2 teaspoons all-purpose flour
2 teaspoons bacon grease
About 1 cup milk (enough to make stiff batter)

Mix all ingredients together. Form pones by hand and put on greased baking sheet. Bake 12 to 15 minutes at 425 degrees F.

Makes about 1 1/2 dozen, depending on size.

This would be pretty tough to do. The egg is sort of the "glue" that keeps the cornbread from being just a mass of powder. Do you have an egg allergy? That would be a bummer. Because cornbread is a drier, quickbread you really do need the egg. Sorry.

2 tbsp corn starch = 1 egg
2 tbsp arrowroot flour = 1 egg
2 tbsp potato starch = 1 egg
1 heaping tbsp soy powder + 2 tbsp water = 1 egg
1 tbsp soy milk powder + 1 tbsp cornstarch + 2 tbsp water = 1 egg.
1 banana = 1 egg in cakes.

Homemade egg substitute recipe

Homemade egg substitutes are less expensive and just as satisfactory. They also have few calories. Here's a low cholesterol egg substitute recipe:

1 tablespoon of nonfat dry milk powder
2 egg whites from large eggs
4 drops of yellow food color

Sprinkle powdered milk over egg whites, then beat them with fork until smooth. Add food color, and beat until blended. This makes 1/4 cup, which is equal to 1 large egg. If you use this homemade substitute for scrambled eggs, cook it in vegetable oil or margarine so the eggs won't be too dry.

Must have a real egg.
