~~~~~~~~ Pork Chop with Barbecue Sauce ~~~~~~~~

“Barbecue” originated from the Mexican-Spanish word barbacoa, describing meat grilled over a green wood fire. Although primitive, barbecuing is one of the healthiest ways of cooking, for it allow any fat to drip from the food. It also seals in all the flavours of the food. The recipe uses a delicious homemade version of American barbecue sauce, which was probably adapted from the devilled sauces made with strong mustard that have been used in British cooking for centuries. This may be prepared a day in advance if refrigerated and then reheated in the oven or simmered gently. Serve with natural yoghurt, filled jacket potatoes and green salad.

4 spare rib chops
1 medium onion
1 tbsp virgin olive oil
3 tsp horseradish sauce
1 tsp mustard powder
1 tsp celery seeds
14oz / 400g can chopped tomatoes
2 tbsp honey
1 tbsp malt vinegar
1 tbsp Worcestershire sauce

Chopped parsley for garnish
Chop the onion roughly. Heat the oil in a saucepan and sauté the onion over a medium heat for 8 minutes until transparent. Add all the other sauce ingredients. Cover and simmer for 10 minutes.
Meanwhile, trim any rind and fat from the spare rib chops and place them in an ovenproof dish large enough to hold them in a single layer.
When ready, spoon the barbecue sauce over the chops, cover and bake in the preheated oven for 45 minutes until thoroughly cooked and tender. Garnish with parsley and serve. Serves4.

~~~~~ WHITE BBQ SAUCE ~~~~~

1 1/2 c mayonnaise
1/3 c cider vinegar
1/4 c lemon Juice
2 tbsps sugar
2 tbsps cracked black pepper
2 tbsps white wine worcestershire sauce

Combine all ingred. In a small bowl: stir w/wire whisk.
Cover & Chill.

Use to baste chicken during grilling.

Easy Skewer Maple Chicken from Good Pepper

Here is an easy dish that can be made with little prep and cleanup time.

Take a few chicken breasts and slice down the middle. Don't cut them all the way in half. Leave about 1/2 inch. Stretch the chicken apart . Pierce with a skewer. Marinate in 1/4 cup maple syrup and 1/4 cup hot sauce and 1/4 cup vinegar for 2 hours. Then place on a hot grill. Turn a few times until done. While the chicken is cooking mix a small amount of lemon juice, ginger and soy sauce in a bowl with some diced onion. Just before you take the chicken off the grill lightly baste with the sauce.

3 small cans tomato sauce
1/4 cup minced onion
1/2 cup brown sugar
1 tsp. freshly ground black pepper
1/2 tsp. dry mustard
1 tsp. salt
1 Tbsp molasses
1 Tbsp corn syrup
1/4 tsp. cayenne pepper
1 tsp. garlic powder
2-3 tsp. liquid smoke

Mix all ingredients and simmer in a medium size saucepan for an hour stirring every so often

goes great on ribs, stake, brats, and pork!

Bourbon Whiskey BBQ Sauce

"This is a barbecue sauce recipe using Kentucky bourbon whiskey. For best results, refrigerate for a day or two, allowing the flavors to blend."


INGREDIENTS
1/2 onion, minced
4 cloves garlic, minced
3/4 cup bourbon whiskey
1/2 teaspoon ground black pepper
1/2 tablespoon salt
2 cups ketchup
1/4 cup tomato paste
1/3 cup cider vinegar
2 tablespoons liquid smoke flavoring
1/4 cup Worcestershire sauce
1/2 cup packed brown sugar
1/3 teaspoon hot pepper sauce, or to taste

DIRECTIONS
In a large skillet over medium heat, combine the onion, garlic, and whiskey. Simmer for 10 minutes, or until onion is translucent. Mix in the ground black pepper, salt, ketchup, tomato paste, vinegar, liquid smoke, Worcestershire sauce, brown sugar, and hot pepper sauce.
Bring to a boil. Reduce heat to medium-low, and simmer for 20 minutes. Run sauce through a strainer if you prefer a smooth sauce.

1large onion , peeled and quartered
1/4cup water
1 1/2cups ketchup
1 1/2cups apple cider
3tablespoons Worcestershire sauce
3tablespoons Dijon mustard
1/4cup molasses
1/2teaspoon ground black pepper
4tablespoons cider vinegar
1tablespoon vegetable oil
2medium cloves garlic , minced or pressed through garlic press (about 2 teaspoons)
1 1/2tablespoons chili powder
1/2teaspoon cayenne pepper
hot pepper sauce , such as Tabasco

Process onion and water in food processor fitted with steel blade until pureed and mixture resembles slush, about 30 seconds. Pass mixture through fine-mesh strainer into liquid measuring cup, pressing on solids with rubber spatula; you should have 3/4 cup strained onion puree. Discard solids in strainer.

Whisk onion puree, ketchup, apple cider, Worcestershire, mustard, molasses, pepper, and 3 tablespoons cider vinegar together in medium bowl. Heat oil in large nonreactive saucepan over medium heat until shimmering; add garlic, chili powder, and cayenne and cook until fragrant, about 30 seconds. Stir in ketchup mixture; increase heat to medium-high, bring to boil, reduce heat to medium-low, and simmer, uncovered, until flavors meld and sauce is slightly thickened, about 15 minutes. You should have scant 4 cups sauce.

The more vinegar you add, the more of a bite the bbq sauce.

Dated a guy once who worked a bbq place where they made their own sauce and it was pretty basic. Start with ketchup (yup, ketchup, already has the vinegar and a few spices in it), add brown sugar, some worsteshire sauce, mustard, onion salt and molasses if you like it a little sweek. Some people like it stronger and add some liquid smoke. It's a personal thing so you have to play with it. You can put in fresh onion if you like, etc. Then you cook in a saucepan for a while until it boils down a little to the right consistency. That's just a basic sauce, you can add whatever you feel like. Have fun!

In a medium nonporous bowl, combine the butter or margarine, onion, green bell pepper, water, ketchup, mustard powder, salt, celery seed, brown sugar and lemon juice. Mix well and use on your choice of meat.
