I scramble and fry it like ground hamburger meat and add some taco seasoning for tacos. You can also mix it with ground beef for meatloaf. Sloppy Joes. Hamburger Stew.
Basically, it can be used in anything you would use hamburger for; especially if you will be spicing it up a little.
Parmesan Turkey Burgers
Ingredients:
1 lb. ground turkey
2 tbsp. grated Parmesan cheese
2 tbsp. dry bread crumbs
2 tbsp. ketchup 1 tsp. Season-All
1/2 tsp. oregano leaves
1/2 tsp. salt
1/2 tsp. paprika
Cooking Instructions:
Combine all ingredients; mix lightly. Shape into 4 patties. Cook on grill 3 to 4 inches from moderate coals for 10 to 15 minutes or until well done.
Try mixing it with some really really lean (7% fat) ground beef, in a basic spaghetti sauce recipe.
Mini Meatloaves (sooooo yummy and easy!)
1 lb ground turkey thawed
1 pkg. chicken flavored stuffing mix
1 tsp garlic salt
1 tsp italian seasoning
Wash your hands and mash it all together really well. Spray some Pam into a twelve cup muffin tin. Split the meat mix into twelve balls and place in each tin. Make a "pocket" in the top and put a little bit of marinara sauce. Bake at 350 F for about 30-35 minutes. At the end, sprinkle a bit of mozzarella cheese on the top of the sauce and bake until the cheese melts. VERY popular in my house!!
I use it just like I would ground beef. especially in sauced things the turkey absorbs the flavors around it really well. Make sure it is really lean ground turkey if not, like in mass produced turkey burger patties , it will have ground skin and will give of this nasty gray ooze while cooking. Also be aware that ground turkey has more moisture in it than beef, it will render it off and look like beef fat, just remove it if you are browning it, if you are making burgers take advantage of it add some dried onions to the meat before you make it into patties, you will add flavor and absorb the extra water at the same time. I like making mine into turkey burgers. I dice and onion, and then add Dale's seasoning, some bread crumbs, mix. Form into patties and cook. Yummy!!
GROUND TURKEY ENCHILADAS
1 1/2 lbs ground turkey
1 pkg frozen spinach - thawed and drained
2 cups salsa
1 can diced tomatoes
1 pkg flour tortillas
2 cups Mexican blend cheese
1 8 oz. block cream cheese
ground cumin to taste
Cook ground turkey in skillet until no longer pink over medium heat. Add drained spinach and 1 cup of salsa to turkey and cumin to taste (about 1 tsp). Cook about 5 minutes until all liquid is absorbed. Remove from heat and add cream cheese. Mix until melted.
Lay flour tortilla flat and place 1/3 cup mix, roll and place in greased 13x9 inch pan with flat side up. Bake for 20 minutes at 350 degrees.
Remove from oven and top with 1 cup salsa mixed with can of diced tomatoes and additional cumin to taste. Top with cheese. Return to oven for 5 minutes until cheese is melted.
Serve with refried beans and mexican rice. Sour cream and guacamole are also great additions.
GROUND TURKEY TACOS
1 1/2 lb. ground turkey
1/4 c. vegetable oil
1/2 c. onions, chopped
1 1/2 c. tomato sauce
3/4 tsp. cumin
1/4 tsp. salt
1 clove garlic, pressed
4 oz. cheddar cheese, grated
Taco shells or flour tortillas
Heat oil in skillet. Add ground turkey and chopped onion. Saute until meat loses pink color. Add tomato sauce, garlic and seasonings. Blend and simmer for 10 minutes or more to allow flavors to blend. Serve in warmed taco shells, sprinkled with cheese or wrap in flour tortillas, sprinkle cheese over and warm in the oven or about 5 to 10 minutes.
GROUND BEEF (TURKEY) STROGANOFF
1 lb. ground beef or turkey
1/2 c. chopped onion
1 can cream of mushroom soup with 1/4 can milk
1 c. sour cream
1/4 tsp. garlic powder
Salt and pepper to taste
Brown ground beef (turkey) and onion. Drain off fat. Add seasonings and soup with milk. Simmer 20 minutes. Stir frequently. Add sour cream and heat through. Serve over noodles.
WHITE BEAN CHILI WITH TOMATILLOS AND
GROUND TURKEY
2 c. (1 lb.) white beans (Great Northern)
2 qts. water
3 tbsp. corn oil
1 1/2 c. chopped onion
1 lb. lean ground turkey
3 lg. cloves garlic
1 tsp. dried leaf oregano
2 (13 oz.) cans tomatillos, drained
1/2 c. cilantro leaves, loosely packed
2 jalapeno chilies, seeded and cored
Salt, fresh lime juice
Rinse and pick over beans. Bring water to a boil in a stew pot and add beans. Bring to a boil again and cook for 2 minutes. Reduce heat to simmer and cover. Cook for 1 1/2 to 2 hours, or until beans are tender but not mushy. Heat oil in a skillet and saute onions for 5 minutes, then stir in turkey and garlic with oregano and cook turkey through.
In a blender, put tomatillos, cilantro, and chilies, and blend smooth. Stir into turkey mixture and add salt to taste. Add this mixture to cooked beans and adjust salt. Add lime juice to taste. Serves 5 to 6.

We've started feeding our dogs homemade food due to the canned food poisoning outbreaks, but this dish w/ ground turkey is perfectly fine for humans!
I take a package of ground turkey and place it in a deep pot *like you would make homemade soup in*. Then I add a large box of brown rice Next I peel and slice about 6-7 good sized carrots and add them into the mix. Finally, add a bit of garlic powder. Then I add just enough water to cover the mixture and stir it all up.
Bring to a boil then cover and reduce heat to med low and let sit about 1.5 hours and it's done. It's totally delicious and it's safe for animals also
I like to make a mac and cheese casserole with it:
1 lb ground turkey
spices (I use 1/2 packet onion soup mix)
1 can cream of mushroom soup
1 box mac and cheese
1. Brown the ground turkey in a skillet with spices.
2. At the same time, prepare mac and cheese as directed on the package.
3. Combine cooked turkey, mac and cheese, and cream of mushroom soup.
4. Put in a baking dish (I usually use a 9x9 glass dish), bake at 425 for 30 mins.
Sometimes I also cook some chopped onion with the turkey.
