What have you discovered for yourself?

recently whilst cooking? I discovered that Corn Tortillas cut into smaller pieces deep fried for a couple of seconds in hot oil make the tastiest, most delicious Crisp snacks, esp good with chilli. That Garlic and Coriander Nan bread dried out and whizzed in a blender makes a brilliant crumb for coating or stuffing chicken etc. That Pork fillet (really cheap) stuffed with a couple of colourful, tasty ingredients, last night I used a tin of chestnut puree thats been knocking about for ages, chopped chorizo,Garlic and crumbs, sliced grilled Aubergine, wrapped in Parma ham, drizzled with olive oil and roasted is amazing, and looked really impressive sliced with lyonnaise pots and broccoli. So What would you like to share?

How to cook. When I was first married, I had to learn it all. I was too hard headed to learn before I got married but I had two good cooks that taught me alot - my mother and my ex mother in law. I didn't have any Italian marinate so I used a different kind - Kens rasberry Vinergarette dressing and I will continue to use that to marinate my meat. It gives the meat a sweeter taste but really gives it flavor.

That making soda bread is really quick and easy and great to eat.

I like to make a cilantro like pesto instead of with basil, using olive oil but adding a zest of lime and some salt and tossing it with some fresh pasta (lime, cilantro, jalepeno if you can find it), grill some salmon with some lime juice, salt, and a little jalepeno juice and it is the most amazing light, refreshing meal for a day at the beach...good even a bit chilled!

I've discovered that if you add some chopped up, cooked chicken to Lipton Rice mix it makes a quick and economical meal! If you take the Lipton noodle mix, add potatoes, corn, and chopped cooked chicken it makes a great dinner for two. If you add garlic to anything it tastes good!

If you have some fresh sage leaves (not dried), you can brown them in butter (in a frying pan). They get really flaky and crispy, and they make great snacks. They also work as garnish for any kind of meat. Just make sure you keep the heat low enough--no higher than "medium"--so the butter doesn't burn.

I discovered this by accident, but I later learned that people have been doing it for a long time.

In a similar vein to the tortilla crisps, cooked pasta (al dente) deep fried until crisp and then tossed with ground black pepper and sea salt is a great snack. Sprinkle on a few drops of Tabasco for a spicier version.

Tuna salad & banana in creepes
-All my friends said it was gross until they tried it. They all love it!

Spam, Jalapeno in sushi.

Riso Ragu
-use rice to subsititue spaghetti in Spaghetti Ragu.

Deep fried Salmon Skin.
-of course, you have to get rid of the scale. Rub it with salt and a bit of flour and deep fry it quickly in very hot oil. It's a great snack. You can use it to substitute bacons in salads.

Mapo Tofu pizza
-actually my boyfriend's invention. He put a slice of cheese singles on a toast, added the leftover Mapo Tofu (spciy tofu with meat) on it and put it in the oven for a minute. It's surprisingly good!

Natto + spicy Mentaiko + Avocado wrapped with Lettuce
-This last one is considered gross for majority of the people. Most people find Japanese Natto smelly and disgusting, but they are super nutritious. Mentaiko is marinated roe. Even my Japanese-Mexican boyfriend find this combination weird. (but I like it!)

I must have the weirdest discoveries/inventions...

garlic mashed potatoes are great with salsa on them, good to eat with tortilla chips! Everybody gets sick when i eat this, until i finally talk them in to trying it! Also Velveeta shells &cheese tastes good with pizza sauce, pepperoni,onions, green pepper,mushrooms, and mozerella cheese-my famous pizza casserole! its a big hit.

every time I cook I discover that cooking with colours makes any dish tastier than ever...
look at it, if is too yellow-ingr-based add some green vegs or red, bla bla bla

I've discovered a lot of ways that cooking can go bad. For example:

Never microwave a paper Chinese takeout box with a metal handle. The handle will get hot and start to burn the paper. There will be smoke.

If this happens, and you want to get it out of the microwave, don't touch the handle!

One whole onion is way too much for most recipes, if you're only cooking for a few people. So is a whole clove of garlic.

Don't undercook an omelet. And don't eat an undercooked omelet, unless you plan to spend some time on the toilet.

I discovered Rachael Ray. She gave a great tip for white sauce. Put a dash of nutmeg in it and it just tastes better. She calls it something else, but it's great. I use white sause for alot of things, and now I am very impressed with nutmeg.

I've learned to eat guava with salt, pear with cheese like parmigiano, wich may seem strange but tastes delicious!

This turned out to be the most amazing thing i've ever made (try this, its not as difficult as it looks)

Hide and Seek Spaghetti Roll

Part 1: the hidden portion

- Minced meat (1 lb)
- 1 onion
- 1 table spoon garlic paste
- 1 tablespoon chopped ginger
- 1 teaspoon pepper
- couple of basil leaves
- 1 teaspoon oregano
- 1 teaspoon of Tabasco sauce
- 1 cup olive oil

1. Mix all the ingredients together
2. Make the minced meat in the shape of wiener sausage (about 4 inches tall and 1 cm radius)
3. Bake them in the oven at 370 F for about 40 minutes / till done.


Part 2: the actual roll (assuming that we are preparing about 4 rolls, 1 sausage per roll)

Ingredients:

- 1/2 cup flour
- spaghetti
- salt


1. heat up 2 cups of water and add the flour
2. Make a glue like paste
3. Boil the spaghetti in a dash of salt
4. Drain
5. Put the flour paste in a thin layer
6. Roll spaghettis around it till all the meat is hidden
7. Sprinkle oil and bake for 5 minutes (300 F)

Dressing

- 1 can of mushroom diced
- 1 avocado, diced
- black pepper (as per taste)
- 2 tomatoes
- Alfredo sauce (1/2 cup)
- Ketchup (1/2 cup)

Put on the spaghetti roll as you like it.

soda bread dipped in beaten egg and fried is nice,i also discovered that my little girl will eat anything if i put the words magic fairy or princess in front of it i.e cheese on toast becomes fairy toast ,very boring i know I'd love to live in your house i will be trying your recipes they sound delicious,TA!

My daughter dates an Ethiopian guy and his father is the greatest cook, I love their food!! the onlt other person I know that can feed an army out of little or nothing is my Mother........
