Sweet Potato Shepherd's Pie Recipe
2 1/2 pounds sweet potatoes, peeled and diced
1 cup buttermilk
2 teaspoons ground cinnamon
1 tablespoon light butter
1 tablespoon olive oil
2 cloves garlic, crushed
1 large carrot, diced
2 cups white button mushrooms, wiped clean
2 tablespoons tomato paste
2 tablespoons steak sauce
1/4 cup all-purpose flour
1 cup beef broth
1 pound turkey thighs, roasted and shredded, skin removed
Preheat oven to 375 degrees F. Place the sweet potatoes into a nonstick saucepan. Cover with cold water. Bring to a simmer and cook until fork tender. Drain well. Mash with potato masher. Add buttermilk, cinnamon, and light butter and continue mashing until well blended. In a separate nonstick saucepan, heat 1 tablespoon of olive oil. Add garlic and sauté for 30 seconds. Add carrot and mushrooms and continue sautéing for 1 minute or until the mushrooms are soft. Add tomato paste and steak sauce and mix until well blended. Sprinkle flour into the mixture. Mix with a wooden spoon until the flour has absorbed all of the moisture. Slowly pour the beef stock into the mixture and stir to blend completely. Add the shredded turkey and simmer until the sauce is thick. Pour the turkey mixture into a 2-quart casserole dish. Top with the sweet potato mixture. Bake for 45 minutes to 1 hour, until the sweet potatoes are slightly browned.

* 2 cups mashed potato, prepared with milk and seasonings as desired

PREPARATION:
Combine meat, gravy, and chopped onion; season with salt and pepper to taste. Line the bottom of a buttered baking dish with a layer of half of the seasoned mashed potatoes. Add meat mixture then cover with remaining mashed potatoes.Or, meat and gravy can be put in the baking dish first then topped with all of the mashed potatoes. Dot mashed potato topping with butter, sprinkle with salt, pepper, and paprika, then bake for about 30 minutes at 400°, or until potato topping is browned and the Shepherd's pie is thoroughly heated.

Here is a basic recipe for a simple ground beef Shepherd's Pie. We dressed it up a bit with some veggies and Worcestershire sauce.
1 1/2 lbs ground round beef
1 onion chopped
1-2 cups vegetables - chopped carrots, corn, peas
1 1/2 - 2 lbs potatoes (3 big ones)
8 tablespoons butter (1 stick)
1/2 cup beef broth
1 teaspoon Worcestershire sauce
Salt, pepper, other seasonings of choice
1 Peel and quarter potatoes, boil in salted water until tender (about 20 minutes).
2 While the potatoes are cooking, melt 4 Tablespoons butter (1/2 a stick) in large frying pan.
3 Sauté onions in butter until tender over medium heat (10 mins). If you are adding vegetables, add them according to cooking time. Put any carrots in with the onions. Add corn or peas either at the end of the cooking of the onions, or after the meat has initially cooked.
4 Add ground beef and sauté until no longer pink. Add salt and pepper. Add worcesterchire sauce. Add half a cup of beef broth and cook, uncovered, over low heat for 10 minutes, adding more beef broth as necessary to keep moist.
5 Mash potatoes in bowl with remainder of butter, season to taste.
6 Place beef and onions in baking dish. Distribute mashed potatoes on top. Rough up with a fork so that there are peaks that will brown nicely. You can use the fork to make some designs in the potatoes as well.
7 Cook in 400 degree oven until bubbling and brown (about 30 minutes). Broil for last few minutes if necessary to brown.

Easy shepard's pie
1 lb ground beef
6 large potatoes
2 (14 ounce) cans green beans
1 small onion
1 cup cheddar cheese (can be supstituted with Colby Jack)
1 tablespoon milk
1 tablespoon butter
salt
pepper
1.Peel and boil potatos until soft. Mash potatos in a mixer. Add milk and butter. salt and pepper to taste.
2.Brown ground beef and onion in medium to large frying pan. Drain grease.
3.Heat green beans.
4.Spread ground beef evenly in pan.
5.Cover ground beef with green beans.
6.Spoon mashed potato onto the green beans and spread until they are completely covered.
7.Sprinkle cheese on top and let melt.
8.Serve and enjoy!
This is a variation of one in a 1940's cookbook!
1 - 1/2 lbs round steak cut into bit-sized pieces
1/2 cup (1 small) onion finely diced
2 stalks of celery finely diced
2 - 3 thinly sliced carrots
3 - 4 potatoes (boiled and mashed)
Dredge steak in seasoned flour (garlic-pepper and paprika) and brown in 2 - 3 tbs oil (mix veg oil and olive for more flavor). Add onions and celery. When meat is nicely browned add the remainder of your dredging mixture to use as a gravy base add 1/2 cup red wine (optional) and cook it down. Add either water or beef broth to make a heavy gravy. To this, add the carrots. You want a thick gravy. Place in a baking dish. Mash the potatoes and spoon over the top of the meat mixture in the dish - use a fork to make ridges all over the pototoes as you cover the dish. Sprinkle shredded cheddar cheese over the top and bake at 350 degrees for 30 min or until bubbly. Serve with hot rolls.
Simple Shepherd's Pie
1# hamburger
chopped onion (optional)
cream of celery
1/4 c. milk
1/2 stick melted butter
16 oz. bag of mixed vegetables
3-4 medium potatoes, peeled and quartered
1 beaten egg
milk for mashed potatoes
(could use instant potaotoes)
Cheddar cheese
Cook hamburger and onion till meat is browned and onion is tender; drain off grease.
Stir in vegetables, soup, 1/4 c. milk, melted butter and season with salt and pepper.
Place mixture in a pan.
Cook potatoes in salted boiling water about 20 min or until tender; drain. mash while hot; stir in egg. Add enough milk to make potatoes fluffy, yet stiff enough to hold their shape. Season with salt and pepper.
Spread potatoes on top of meat mixture. Sprinkle with cheese.
Bake, uncovered, in a 350 degree oven for 30-40 minutes.
makes 4-6 servings
If you want to shorten the recipe to about 25-30 minutes, then cook your mixed vegetables and then add to hamburger mixture.
Edit: You can substitute cream of mushroom for the cream of celery. But the cream of celery compliments the mixed vegetables.

1 large onion, cut in half and sliced
1 1/2 lbs lean ground beef
salt and pepper
garlic powder
1 (14 3/4 ounce) can whole kernel corn
2 (14 3/4 ounce) cans cream-style corn
6 large potatoes, peeled, boiled, and mashed with milk and butter
3 tablespoons butter
PREPARATION
1. In a lg. frying pan cook the onion until almost done. Add beef and stir, cooking until meat is cooked through.
2. Add a sprinkling of salt, pepper, and garlic powder over the top of the mixture.
3. Spoon mixture into a 9x13" baking pan.
4. Top with the 1 can of whole kernel corn, spreading across the meat mixture, then add the 2 cans of cream style corn.
5. Cook and mash the potatoes until smooth. Add the mashed potatoes over the top of the casserole.
6. Dot with pats of butter all over the top.
7. Put in a 350 F or 175 C oven, and bake for 30 minutes or until top is lightly brown.

1/4 cup onions, chopped
1/4 cup fine dry breadcrumbs
10 1/2 ounces cream of chicken soup
1 egg, slightly beaten
2 tablespoons parsley, chopped
1/4 teaspoon salt
1 dash pepper
2 cups mashed potatoes
1/4 cup cheddar cheese, shredded
Thoroughly mix 1/2 cup of the soup, beef, onion, breadcrumbs, egg,parsley& seasonings.
Press firmly into a 9 inch pie plate.
Bake at 350 for 25 minutes;spoon off fat.
(I usually dab with some paper towel if i get any excess, not much with lean beef though) Frost the pie with mashed potatoes that have been mixed with the remaining soup.
