Homemade Salad Dressings?
I am looking for some homemade salad dressing recipes that contain: Extra Virgin Olive Oil, Balsamic Vinegar, Honey, etc. I like more of a fruity/sweet dressing. Thanks for your help!

Dressing:
2 tbsp thawed orange juice concentrate
2 tbsp olive oil
1 tbsp balsamic vinegar
1 tsp minced garlic
1/2 tsp liquid honey
1/2 tsp Dijon mustard
It goes with this salad, but is good on anything.
Spinach Salad with Candied Pecans, Pears and Brie
Candied Pecans:
1/3 cup pecan halves
3 tbsp icing sugar
1/4 tsp cinnamon
1/8 tsp allspice
1/8 tsp nutmeg
Salad:
8 cups baby spinach leaves
1 cup radicchio
1 large ripe pear, cored and thinly sliced
2 oz brie, diced
Method:
1. Preheat oven to 350°F. Spray baking sheet with non-stick cooking spray.
2. To make the candied pecans: rinse the pecans with cold water. Drain, but do not let dry. In a small bowl, combine the icing sugar, cinnamon, allspice and nutmeg. Dip the pecans in this mixture to coat well. Spread on the prepared baking sheet. Bake for 15 minutes. Cool and chop.
3. To make the salad: In a large bowl, combine the spinach, radicchio, pear and brie.
4. To make the dressing: In a small bowl, whisk together the orange juice
concentrate, olive oil, vinegar, garlic, honey and mustard. Pour over the salad and toss to coat. Garnish with candied pecans.

Simple Balsamic Vinaigrette
1/4 cup balsamic vinegar
2 teaspoons dark brown sugar or honey, optional*
1 tablespoon chopped garlic
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
3/4 cup olive oil
Beat the vinegar in a bowl with the optional sugar, garlic, salt and pepper until sugar and salt dissolves. Then beat in the oil by droplets, whisking constantly. (Or place all the ingredients in a screw-top jar and shake to combine.) Taste and adjust the seasonings.
If not using dressing right away, cover and refrigerate, whisking or shaking again before use.
*If using a good quality balsamic vinegar you should not need the sugar, but if using a lesser quality you might want the sugar to round out the dressing.

Balsamic Vinaigrette
1/2 cup balsamic vinegar
1 tablespoon soy sauce
2 tablespoons honey
2 cloves garlic, minced
Crushed dried red pepper to taste
1/2 cup extra-virgin olive oil
In a medium bowl or food processor, whisk together balsamic vinegar, soy sauce, honey, garlic, and red pepper. Add olive oil in a thin stream, whisking until emulsified.

DIJON VINAIGRETTE DRESSING
1 clove garlic, minced (I use 2)
1 to 2 tsp. Dijon style mustard
Pinch of basil and/or oregano
Dash of white pepper
Dash of cayenne
A squeeze of lemon - no seeds please
1 to 2 tsp. honey
1 tbsp. balsamic vinegar
1/4 c. good olive oil
Put all ingredients in a small bowl except olive oil.
Prepare greens and vegetables.
When ready to dress salad, slowly add olive oil to other ingredients while whisking to incorporate oil in a suspension. Immediately pour over salad and toss. Sometimes I use a culinary herb blend instead of just basil.
I came up with a honey vinagrette that is very easy to make. I don't have exact measurements, I just sort of eyeball it and go by taste. Here are the ingredients:
Dijon mustard
half a shallot finely chopped
about 1 tsp. garlic powder
a few parsley leaves chopped
salt and pepper
honey
a splash of red wine vinegar
olive oil
I mix in all the ingredients except the olive oil. Stream the oil in slowly while stirring. Enjoy!!
be creative! just throw in the basic ingredients you listed, then add something for flavor.
