Jambalaya is good,easy and filling.
I even easy it up with zaterans.
and I make corn bread to go along side
they complament each other.

try fried corn.

1 lb of cubed/sliced slab bacon
6-8 ears of corn
1/2 large green bell pepper,chopped
1 large shallot,diced
salt and pepper to taste
1/2 stick of unsalted butter
2-tablespoons half & half
1 tablespoon vegetable oil
cut corn from the cob and scrape down the xcorn milk from the cob with the back of the knife and set aside.
In iron skillet heat 1 tablespoon oil, add cubed bacon. Brown the bacon until crisp do not drain the fat add the bell pepper and shallots, cook until tender stiriing as needed. add corn to the pan and stir occassionally for about 5 minutes. add butter and stir, add half & half, stir and cook for another 2-3 minutes.
add salt and pepper to taste.

Get ready for the compliments this is um-um good.

try this, its a church potluck favorite.

Red Beans and Rice with kielbasa

Use Vigo Red beans and Rice
I use two packages cook according to directions and add sliced kielbasa (14oz)
to the rice mix and cook for 25 minutes.
If you cant find Vigo brand the Mahatma brand will work.

A Southern Baptist get-together isn't complete without a Green Bean Casserole. I've included a link to a Campbell's Soup recipe for the green bean casserole. Enjoy!

Here ya go, three to choose from, all tried and true Southern staples. Well, the third one isn't really a covered dish, but if ya brought it along with ya everyone would love ya forever. Trust me, it's the best sweet potato pie ever.

Cheese Grits with Ham:
* 3 cups water
* 1/2 teaspoon salt
* 3/4 cup quick-cooking grits
* 1/2 cup shredded Mozzarella cheese
* 1/2 cup finely diced ham
* 2 tablespoons finely chopped green onion
* 2 eggs, separated
* couple dashes Tabasco sauce
Butter a deep 1 1/2-quart casserole and preheat oven to 375°.
In a medium saucepan, bring water and to a boil; stir in grits. Cook, stirring often, for about 5 minutes, or until thickened. Stir in the cheese, ham, green onion, egg yolks, and Tabasco sauce.
In a bowl, beat egg whites until stiff peaks form. Fold into the grits mixture. Pour mixture into prepared casserole and bake for about 30 minutes, or until puffed up and golden brown. Serve immediately.

Scalloped Asparagus
* 2 to 3 pounds of asparagus, or 18 to 20 ounces frozen asparagus
* 6 tablespoons butter or margarine
* 3/4 cup soft bread crumbs
* 1/4 cup all-purpose flour
* 1/2 teaspoon salt
* 1/8 teaspoon pepper, or to taste
* 2 cups milk
* 1/2 teaspoon Worcestershire sauce
* 3/4 cup grated mild Cheddar cheese
* 2 ounces drained pimiento, 1/4 cup chopped
Wash asparagus, remove woody part of stalks and cut into 2 1/2-inch pieces. Cook in boiling salted water until just tender. Drain and place in a shallow baking dish or casserole. Melt butter in saucepan.
Mix 2 tablespoons of the butter with the soft bread crumbs; set aside for topping casserole later. Blend flour, salt, and pepper into remaining butter in saucepan. Continue cooking and stirring over low heat. Gradually add milk, stirring until thickened. Add Worcestershire sauce, pimiento, and cheese; stir until cheese is melted. Pour sauce over asparagus in casserole; top with buttered crumbs. Bake at 350° for 20 minutes.

Sweet Potato Pie
1 9 in. unbaked pastry shell, preferrably deep dish
1 1/2 cups mashed cooked sweet potatoes (boil in skin til fork tender, cool, peel, and mash)
1 cup evaporated milk
1/2 cup sugar
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon allspice
1 teaspoon vanilla
3 eggs, slightly beaten

1. Combine mashed sweet potato, milk, sugar, spices, and vanilla in bowl; stir til blended.
2. Stir in eggs.
3. Turn into pie shell.
4. Bake at 450 degrees for 10 minutes; reduce heat to 350 and continue baking for 30 minutes.
5. Cool on rack; refrigerate.

"CHICKEN SPAGHETTI - SOUTHERN STYLE"

4-6 chicken breasts, skin removed
1/2 c. chopped onion
1/2 c. chopped green pepper
4 oz. can sliced mushrooms
8 oz. can ripe olives
12 oz. pkg. spaghetti
4-6 tbsp. chopped pimento
12 oz. pkg. frozen peas
Celery salt, salt and black pepper, seasoned salt (optional)
1 1/2 c. grated Cheddar cheese

Cook chicken, reserving 6 cups chicken stock. Bone chicken and cut into coarse pieces. Saute onion, green pepper and mushrooms, drained (reserve liquid). Add liquid from mushrooms and ripe olives to stock and bring to boil, then add spaghetti. Cook until tender. Add cut-up chicken, sauteed mixture and pimento, ripe olives, peas and seasoning salts. Pour half the mixture into 3 quart baking dish. Sprinkle 3/4 cup grated cheese over mixture. Pour remaining mixture over all, then top with remaining cheese. Bake covered 30-40 minutes; uncover and bake 15 minutes longer - serve hot. Temperature to bake is 325 degrees. Serves 8 to 10

easy way to not even cook --

get a bag of shredded cole slaw

get an 8 oz jar of kens steak house vidalia onion salad dressing.

mix.

serve.
