homemade mac & cheese & fried chicken?

i like to buy the chicken wingettes.. i usually just throw some Bell's seasoning and maybe a little adobe (occasionally curry powder), put them in the flour then cook. sometimes they come out great, sometimes i overcook, sometimes i overseason.

for the mac & cheese i grate like a bar and a half for a 1 pound box, cook pasta, mix and season an egg and about a half cup of milk. i use the basic seasonings. i then layer -- cheese, pasta, more seasoning; cheese, pasta, more seasoning; cheese, breadcrumb, egg mix. sometimes it comes out good, sometimes al dente, sometimes mediocre... i don't know.

any chefs or soul connoisseurs have some tips? i'm willing to experiment, slice, dice, grind, marinate, boil.. etc....

Have you tried cooking the macaroni al dente with salt in the water, drain, and then layering macaroni and grated cheese in a casserole dish?
Then add evaporated milk and cook in oven until bubbly.

The chicken will taste better and the meat will be whiter if you marinate the pieces in salt water for 1 hour before draining and preparing to fry. It makes the meat more tender, also.

for ur friend chicken you can egg it or butter it and then dip it in cornmeal or cornflakes...and then fry it
mac and cheese my dad always makes a white sauce and then cooks pasta separately puts together and then he cooks it...that is delicious as well...if you want over the top mac and cheese use velveeta mmmm yummy now i am hungry lol
