Prawns stick to the shells when cooked?
It is very difficult to peel off the shells from cooked prawns - why is this so?
Answers:
Pour some vinegar or squeeze several lemons into the boil prior to adding the prawn. The acid loosens the shell as it cooks. Enjoy!
You may be cooking them too long.
Try soaking them in Cold water for 15 minutes first and then peel them. They will shrink a bit in the cold water and be easier to get out of the shells.
The shells are good for making prawn stock for use in making sauces or soups and chowders, so save them if you are shelling a large amount of them and boil them until the water turns pinkish and then freeze it till you are going to use it.
if you over cook it will make the meat tough and that might stick to the shell
You can deshell a prawn in three steps.
1. pinch the back of the head, squeeze and twist off head.
2. place thumber between the legs half way down shell and crack open shell and push thumb under shell and round torso.
3. pinch the tail shell just where it meets the meat and slide it off.
