Cheesy Baked Grits
1 quart milk
1/2 cup butter
1 cup uncooked grits
1 teaspoon salt
1/2 teaspoon white pepper
1 cup shredded Cheddar cheese
1/3 cup butter
1/2 cup grated Parmesan cheese
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
Bring the milk to a boil in a pot over medium heat. Melt 1/2 cup butter in the boiling milk. Gradually mix in the grits, and cook 5 minutes, stirring constantly. Remove from heat, and season with salt and pepper. Beat with a whisk or electric mixer until smooth. Mix in the Cheddar cheese and 1/3 cup butter. Transfer to the prepared baking dish, and sprinkle with Parmesan cheese.
Bake 1 hour in the preheated oven, until firm.

Cheap and Easy Cheesy Grits
1 cup instant grits, prepared
1 cheese packet from mac & cheese, prepared with half the milk and butter, but all the cheese. Heat the milk and butter over a low flame, whisk in cheese.
Add cheese sauce to grits, it should be pretty thick, if it is too thick, add more milk a little at a time.

Ingredients:
6 cups water
6 cups milk
2 teaspoons salt
1 teaspoon freshly ground white pepper
4 tablespoons butter
1 1/2 cup white grits; NOT instant or quick cooking
16 ounces finely grated white cheddar cheese
Directions:
In a large saucepan, over medium heat, combine the water, milk, salt, pepper and 2 tablespoons of the butter. Bring the liquid to a gentle boil. Stir in the grits. Cook for 1 hour and 15 minutes, stirring occasionally. The grits will stick to the bottom of the pan, so make sure not to scrape the bottom of the pan. If the grits absorbed all of the water, add some hot water to thin out the grits. Remove the pan from the heat and stir in the remaining 2 tablespoons butter and cheese
