Spaghetti with meatballs

Serves 4
Preparation time less than 30 mins
Cooking time 10 to 30 mins
Ingredients
600g/1lb 5oz spaghetti
250g/8?oz minced beef
1 egg
100g/3?oz "00" or strong flour
600g/1lb 5oz tinned, chopped tomatoes
1 medium onion, finely sliced
1 red chilli, finely sliced
small glass of red wine
90ml/3?fl oz olive oil
handful of flatleaf parsley, finely chopped
100g/3?oz pecorino cheese
salt to taste
Method
1. In a large bowl, mix the minced beef, egg and parsley together. Season to taste.
2. Now take a teaspoon of mixture and, in your hand, roll it into a ball. Dust the ball in flour and put to one side. Repeat with the rest of the mixture.
3. In a frying pan, gently sauté the onions and chilli in the olive oil until soft.
4. Add the meatballs and gently fry until golden brown.
5. Now add the red wine and simmer for approximately two minutes. Once the wine has evaporated, pour in the chopped tomatoes. Season to taste and cook for a further four minutes.
6. In the meantime, cook the pasta in boiling, salted water until al dente. Drain and add to the sauce.
7. Mix well and serve with freshly grated pecorino.

Ingredients
2 tbsp olive oil or sun-dried tomato oil from the jar
6 rashers of smoked streaky bacon, chopped
2 large onions, chopped
3 garlic cloves, crushed
1kg/2?lb lean minced beef
2 large glasses of red wine
2x400g cans chopped tomatoes
1x290g jar antipasti marinated mushrooms, drained
2 fresh or dried bay leaves
1 tsp dried oregano or a small handful of fresh leaves, chopped
1 tsp dried thyme or a small handful of fresh leaves, chopped
drizzle balsamic vinegar
12-14 sun-dried tomato halves, in oil
salt and freshly ground black pepper
a good handful of fresh basil leaves, torn into small pieces
800g-1kg/1?-2?lb dried spaghetti
lots of freshly grated parmesan cheese, to serve

Hmmmmm. Choices choices. Well I would go for some spag bol as that is my favourite plus you can bung a few odds and ends in that have been lurking in the fridge for a few days.
Cottage pie with lashings of gravy. Delicious!

Add salt, pepper, paprika, chilli powder, chopped red onion, chopped jalepenos, tomato puree, garlic & bind with egg yolk.

Shepherds Pie, add carrots, onions, peppers, garlic etc with some nice crispy brown mashed potatoes on top, finished with a sprinkling of some nice cheese! although the spag bol with bacon in sounds delicious x
Try Canneloni one day, it's great and the whole family loves it. Just buy some pasta canneloni tubes and stuff them with the cooled cooked mince (make sure it's got some flavour to it - a bit of tomato paste and pasta sauce and perhaps some kidney beans too), then put a thin layer of pasta sauce into a rectangular dish and place rows of canneloni on it, then another thin layer of pasta sauce on top, followed by a sprinkling of cheese - bake for 35 mins - make sure top is browned and pasta is cooked to tender. Delicious!!!!!!!!!
My preference would be for Chili Con Carne but I prefer chopped meat rather than mince in this dish. It has to be Spaghetti Bolognese, in which I include a small quantity of finely chopped streaky bacon.

Have Lasagne
Spicy lasagne bolognese
2 tbsp olive oil
1 clove garlic, finely sliced
? red onion, sliced
100g/3?oz beef fillet, minced
? tsp chilli flakes
1 tbsp tomato purée
50ml/2fl oz red wine
200g/7oz tinned cherry tomatoes
salt and freshly ground black pepper
6 sheets lasagne (blanched and refreshed)
100g/3?oz buffalo mozzarella
50ml/2fl oz double cream
Method
1. Preheat the oven to 200C/400F/Gas 6.
2. Heat the oil in a frying pan and cook the garlic and onion until soft.
3. Add the beef mince and cook through.
4. Add the chilli flakes and tomato purée and stir together.
5. Add the red wine and cook down until reduced by half.
6. Add the tinned cherry tomatoes and simmer for 10 minutes then season to taste with salt and freshly ground black pepper.
7. Place three sheets of lasagne in the bottom of a small ovenware dish and spoon the bolognese sauce over the pasta, then place three more sheets of pasta on top.
8. Tear the buffalo mozzarella into pieces, lay on the pasta and pour the cream over. Bake in the oven for five minutes.
9. Serve in the ovenware dish.
or Open lasagne with rich tomato and onion sauce
For the tomato sauce
1 tbsp olive oil
1 onion, chopped
2 garlic cloves, chopped
1 tbsp tomato purée
400g/14oz canned cherry tomatoes
2 tbsp white wine
salt and freshly ground black pepper
handful fresh basil leaves, chopped
For the cheese sauce
150ml/? pint double cream
100g/3?oz parmesan cheese, grated
pinch freshly grated nutmeg
salt and freshly ground black pepper
To serve
1 x 250g/9oz packet fresh lasagne sheets, cut in half and cooked according to packet instructions
4 anchovies, drained and chopped
2 tbsp grated parmesan
fresh basil leaves
Method
1. For the tomato sauce, heat the oil in a frying pan, add the onion and gently fry until softened but not coloured. Add the garlic and cook for one minute.
2. Add the tomato purée, cherry tomatoes and white wine and simmer for 3-4 minutes. Season, to taste, with salt and freshly ground black pepper, add the basil and stir.
3. For the cheese sauce, heat the cream in a small pan and bring to simmering point. Simmer for 2-3 minutes until the cream thickens.
4. Remove from the heat, add the cheese and nutmeg and season, to taste, with salt and freshly ground black pepper.
5. To serve, place a large spoonful of sauce onto two serving plates. Top each pile of sauce with a sheet of pasta. Add another spoonful of sauce and sheet of lasagne to each pile and finish with the sauce. Sprinkle over the chopped anchovies and parmesan cheese. Pour over the cheese sauce and garnish with basil
Spag Bol but without the spaghetti it tastes lovely with rigatoni (tube pasta, not the huge ones)
I would have either shepards pie or chilli con carne with guacmole, yogurt and nachos sprinkled on top
You could do burgers with red onions...salsa..salad and mc coys chips on the side
or kofta like kebabs but grilled...marinated with mint and served with rice and yogurt
Minced meat with onions, carrots, peas but served with potatoes or rice
cottage pie. Don't forget to add the peas, carrots and onion. Yummy.
