You have to refrigerate the mac n' cheese before frying it. Dump it into a shallow pan...refridge....and then take it out and cut it into squares. If you really want it to be in the shape of a ball you could probably use the warmth of your hand to shape it a bit. dip it into egg and then into a breadcrumb mixture. Fry it up.

Depending on the recipe that you use...even if you refrigerate or freeze the mac n' cheese before breading, once it gets hot in the oil it should get creamy again.

I just saw a recipe for this on the foodnetwork website. Give that a try.Kitchenlink.com has a copycat section so you might try looking for the TGI recipe through them. I've never tried it before....it's good ,huh?

You had them fresh out of the fryer, that is why they were hot and cheesy. You need to refrigerate. Take it out of the refrigerator, let it get to room temperature, shape into balls by squeezing together tightly. Roll into flour, then into an egg and milk mixture (with a little hot sauce), then into bread crumbs. Deep fry. Sprinkle with sea salt right out of the fryer.
