Coconut Ice

This simple Thai dessert uses only four ingredients - coconut milk, sugar, shredded coconut and fruit. Topping the ice cream with toasted coconut makes a great crowning touch. To make the topping, just spread coconut flakes on a baking sheet and bake at 325 degrees Fahrenheit for about five minutes, stirring occasionally, until the coconut flakes turn a rich brown color. For added flavor, stir in a bit of cinnamon or sugar before toasting. Cool before adding to the ice cream.
