Crock Pot Beef Veggie Soup sooooooooooo easy and good

the night before (right before you go to bed) place beef roast , 2 whole carrots,1 onion cut in half,4 gloves garlic, salt, fresh ground pepper, in crock pot cover with water almost to the top of the pot let cook over night.
in the morning, remove roast place on plate to coo;l, cut meat into bite size pieces (meat will be falling apart), remove carrots, onion, garlic discard. Don't throw out broth.
cut up fresh veggies like root veggies, potatos, carrots, celery, peppers, onions, cabbage, green beens, peas, (I do this the night before as well as I work)
throw veggies, and meat back in pot cook on low all day . About a hour before serving i add a can of diced tomato's (size depends on how much you like tomato) at this time you may also add canned veggies (I like lima beans) or any frozen veggies you may like. The fresh veggies never get mushy I love the crispness they keep this also works great with venisen roast.

Simple easy and delicious, we had this a few years ago, and it is now our regular Easter Meal.

Cranberry Pork Roast
1 (3-4 lb) boneless pork loin
Salt and pepper to taste
1 cup chopped cranberries (I always use craisens)
1/4 c honey
1 teaspoon grated orange peel
1/8 teaspoon ground cloves
1/8 teaspoon freshly grated nutmeg (I used dry)

Sprinkle roast with salt and pepper. Place in slow cooker. In a small bowl. combine remaining ingredients, pour over roast (it is more like spread over, as the honey is so thick you can't pour). Cover and cook on low 8-10 hours.
