I'm trying to get my husband to eat lentils. Does anyone have a great lentil recipe to share?

great ones always the simplest. Chop a medium size of red/white onion, saute in a hot pan with butter; add a tsp turmeric powder n half tsp of paprika. Saute 4 a min. or two on low heat add no. 2 fresh cut tomatoes (diced of potato-opt). Add in enough water bring it 2 boil.Add in salt to taste.Cook ya lentil until half cooked than add half cup fresh milk, simmer on low fire until fully cook.Switch off the fire sprinkled with roasted crushed cumin chopped parsley.MMmmmm..yummy!
Yep, this is really good. I make it all the time, and serve it with warm bread and a green salad. Enjoy!
Lentil Salad with Tomato and Dill
1 cup dried lentils (preferably small French lentils)
1 large garlic clove, chopped
1 teaspoon salt, or to taste
3/4 lb tomatoes, diced (2 cups)
4 large scallions, thinly sliced (3/4 cup)
1/4 cup chopped fresh dill
1/4 cup thinly sliced fresh basil (optional)
3 tablespoons red-wine vinegar, or to taste
1/4 cup extra-virgin olive oil
1/4 teaspoon black pepper preparation
Bring 4 cups water to a boil in a 2-quart heavy saucepan with lentils, garlic, and 1/2 teaspoon salt,
then reduce heat and simmer, uncovered, until lentils are just tender, 15 to 25 minutes. Drain in a
large sieve, then transfer to a large bowl.
Toss hot lentils with tomatoes, scallions, dill, basil, vinegar, oil, pepper, and remaining 1/2 teaspoon
salt, or to taste.
I know a great lentil soup it makes a pretty big pan full but you can freeze it: 500g red split lentils,1 leek, 2 large carrots,1 small turnip,2 small onions. Then grate everything exept the leeks which you finely chop.Now add to a pressure cooker or large pan and then almost fill to the top with water, leave about 3 inches from the top.then put it on a high heat. and then add about 4 to 5 knorr ham stock cubes and season with salt and pepper,simmer for 2 to 3 hours remembering to skim off the froth off the top.Enjoy.

1 tablespoon olive oil
2 cups chopped onions
1 tablespoon grated ginger
salt
black pepper
2 tablespoons chopped garlic
2 teaspoons ground cumin
2 teaspoons curry powder
1 teaspoon ground coriander
2 1/2 cups water
2 cups chicken broth
2 cups dried red lentils
3 bay leaves
1 cup plain yogurt
3/4 cup tomato puree
1. Heat oil in a dutch oven over medium heat and add onions, ginger, and a dash of salt& pepper.
2. Cover and cook for 10 mins until soft.
3. Add garlic, curry powder, cumin, coriander and cook for 1 minute.
4. Add water, broth, lentils and bay leaves and bring to the boil.
5. Cover and reduce heat, simmer for 2 hrs until tender and the liquid is absorbed.
6. Remove bay leaves, add the yogurt and tomato puree and simmer 5 minutes until heated through.
