Beets are good.
I try to avoid added food coloring,beet color is sometimes used in yogurt.
tomatoes are nice, broccoli salad adds green, or a mixed green salad.
Use whole grain bread.
Deviled eggs give nice protein and color, how about cheese?
Serve a mixed fruit juice.
Blueberries are in. I made a Waldorf salad with unpeeled apples and blueberries, got many compliments.
Little ham rolls are a nice color.

Chickpea Salad [4 servings]

2 cups chickpeas
1 tablespoon butter
1 cup savoy cabbage, thinly sliced
2 spring onions, sliced
8-10 sun-dried tomatoes, chopped
2-3 cloves garlic, minced
3 tablespoons olive oil
1/2 teaspoon cayenne pepper
1/2 lemon, juice of
salt & freshly ground black pepper

Melt the butter in a small saucepan and then sauté the cabbage for 2-3 minutes, until it has softened but is not completely wilted.
Mix the cabbage in a bowl with the chickpeas, spring onions, garlic cloves and tomatoes.
Whisk the oil, cayenne pepper and lemon juice separately and pour it over the salad.
Sprinkle over some salt and pepper and mix.
Chill for a couple hours before serving.

Salmon Pasta Salad Recipe

1 can (7 3/4oz) salmon, undrained
2 tbs olive oil
2 tbs white wine vinegar
1 tsp Dijon mustard
1/2 tsp sugar
1/4 tsp salt
Dash of ground black pepper
2 cups cooked shell macaroni
1 Red Delicious apple, unpeeled and diced
1/2 cup chopped walnuts
2 tbs chopped green onions
2 tbs chopped fresh parsley
Lettuce

Drain salmon reserving 2 tbs salmon liquid; flake with a fork. Set salmon aside. Combine reserved salmon liquid with olive oil, vinegar, mustard, sugar, salt, and pepper in a small bowl; blend well. Pour over pasta. Cover and refrigerate at least one hour. Add reserved salmon, apple, green onions and parsley. Stir well. Serve in lettuce lined bowl. Serves 4.
