Do you need whipped cream for cheesecake?
My teacher feels you need whipped/doubled cream for cheesecake I need as many recipes without fresh cream as possible to prove her wrong.

normaly you use mascaponi cheese for cheesecake not whipped cream. Infact thats the first time ive heard that you could use cream

There are many recipes that don't require whipped cream. Kraftfoods.com had many cheesecake recipes.
I use cream cheese, and sour cream , if you can′t find sour cream just add lemon juice to single cream. I′ll get back to you with my recipe , it easy and simple. PS, Hello Mary back again, This is the recipe.
CHEESE CAKE
75g (3oz) butter
150g (6oz) digestive biscuits crushed,
90ml (6tbsp) Lemon juice
11g(4oz) gelatin,
284ml , carton sour cream
225g (8 oz) cream cheese,
379g can Nestle sweetened condensed milk
Strawberries to decorate
You need a 20.5cm (8"loose bottom cake tin
Melt the butter, crush the biscuits
add the 2 together, mix well
press mixture into the tin
Place lemon juice into a glass bowl
add the gelatin dissolve by standing bowl in a pan of simmering water, stir occasionally, leave to cool.
Now the easy part.
put sour cream, condensed milk & cheese all into a bowl ,
whisk together , then add the gelatin,
por into the dish, and leave in the fridge to set,
then decorate
Try using marscapone! Using that is much better all the way around including taste!
Well according to http://www.recipeland.com/recipe/43132/... , you do not. The main ingredient is cream cheese, but I guess it would not hurt to put some on top with what ever flavor fruit you use.
Unless it's purely for decoration purposes Wipped cream is not used in cheesecake Mascapone or cream cheese is used

Is it an unbaked cheesecake? Because most unbaked, chilled or frozen cheesecakes you use the whipped cream for sweetening and bulk. I never use cream in my baked cheesecakes. If it is unbaked, use the recipe on the knox unflavored gelatin box, it does not call for whipped cream at all.
No i'd use marscapone and use a little icing sugar to sweeten it!
The cream would be added to give some volume! Instead use cottage cheese in the recipe (Blended) or ricotta cheese. But do fold in stiffly whipped egg whites to which you added a squirt of lemon juice (only alittle mind!) This fixes the whites and keeps them stiff. If making a cold cheesecake a simple idea is to make up a block of jelly to half a pint with fruit juice and fold this in when it is thickening, you would then not need to use gelatine to set the cheesecake
I've always seen cream cheese, ricotta, or marscapone cheese as the basis for cheesecake. Whipped cream could be a topping, but not an ingredient for cheesecake!

never heard of whipped cream in a cheesecake. wouldn't it break while baking? some teachers need to get with it. my daughter's told her she wasn't beating her eggs properly for an omelet. my daughter learned omelets by watching julia child videos with me and then making family breakfast. to order. don't sweat the teach so much. look the recipes up on the web. cooks.com will give you hundreds. betcha 1% include whipped cream.
