You don't say why you are avoiding the eggs. Are you allergic? or do you just not have any eggs?

If you want to simplify, go with the bisquick.

If you are allergic DON'T go with the bisquick.

If you use Bisquik, all you have to add is milk.

just add a little more milk to the recipe. They don't really need the egg.

Readymade pancake mix has dry eggs in it so if you're allergic to eggs don't use them! Hoever, if you go to a health food store you can find liquid lecithin that can be added to other ingredients to substitute for eggs. Egg contain a form of lecithin which helps "bind" ingredients so they don't seperate when mixed. The health food store may have some recipes, too.

you can go to the store and buy the ready-made pancake mix and all that you have to add is water.

I beileve that you can get egg replacement, im not really sure where, but i think you can get it in Thunder bay, ON. at Kelly's Nutritional center.

Usually you can just buy it in a store but if you are making them yourself you really don't need the eggs that much since it isn't the largest part of making the pancakes. But you do need to make sure to have butter or some kind of binding agent in the pancakes or they won't really come out right.

The texture would not be spongy.
Eggs enhance the flavour of the pancake.
Moreover, it adds value to it.

Part of becoming vegan is letting go of what you used to eat. Good pancakes may just have to be one of those things. They are not the same without eggs. Many people will tell you that there is no difference, but they are wrong. If there was no difference then nobody would eat the pancakes made with eggs.

The way I make pancakes, the basic batter is:
* 1 cup self-rising flour
* 1 egg or 3 tablespoons liquid vegetable canola oil
* 1 cup milk
* 1 teaspoon of granulated sugar
* 1 teaspoon vanilla flavoring
* one half teaspoon of baking powder (opt)
*Toppings of choice--pancake syrup, butter, bananas, cooked apples, cooked strawberries, fruited jams, whipped cream, chocolate bits, powdered sugar--not all at the same time of course

Place the flour and egg and half the milk into the mixing bowl and mix until smooth. Add the rest of the milk until the batter pours easily off a spoon but is not too watery. Use more milk if needed. Add the sugar, and vanilla -- if you are using it, add the baking powder, and mix again. Let the batter stand for about 20 minutes and give it a final mix.
Pour batter onto a preheated griddle in small circles. Griddle until top surface is full of unbroken bubbles and under surface is golden brown. Turn and brown on other side.
Usually make this with egg but one family member is allergic to corn and eggs so I came up with adaptation.

You can use soy milk (West Soy or Silk) in place of the regular milk and you can even use water. Substitutions result in different cooking times and browning effects.....all of which are edible.

Allergy Cookbook had the following --Egg free pancake recipe

Sift together:
1 cup sifted rice flour
3 tablespoons sugar
2 tablespoons corn starch
1/2 to 3/4 teaspoons salt
1 1/2 teaspoons baking powder


Combine:
1/3 cup soy milk
2/3 cup water
2 tablespoons melted vegetable shortening (slightly cooled)

Pour liquid mixture all at once into dry mixture. Stirring until mixture is smooth.For each pancake pour about 1 tablespoon of batter onto a preheated griddle. Griddle until top surface is full of unbroken bubbles and under surface is golden brown. Turn and brown on other side. Serve at once with dark corn syrup.
