Bottom Round Steak Recipe?
I've got 2 bottom round steaks (about 1.2 lbs together).
I realize it's a tough piece of meat, so braizing is the best way to cook?
But I have no idea what to do with it. Can anyone suggest any recipes? Nothing gourmet. I'm a country girl that likes to stick with mostly country cooking. Going out on a limb is ok, but nothing too fancy!

SWISS STEAK
I always use bottom round steak to make Swiss steak according to James Beard's recipe. Liberally salt and pepper the steaks, then coat them with flour and, with the side of a plate, POUND the flour into the steak. Both sides. Keep at it until a lot of flour has been pounded in the steaks.
Heat a combination of oil and butter over medium high heat, dip the steaks in flour and brown the steaks well on one side. Turn them over and add lots of sliced onions. Let the other side brown and the onions soften and turn golden. Throw in some minced garlic for a minute or so.
Add some beef broth mixed with a little wine maybe 2/3 of the way up the sides of the beef. Bring to a boil, then reduce the heat, cover and simmer for 90 minutes to two hours. Adjust the seasoning.
The meat will be nice and tender and tasty, and the flour mixes with the broth and wine to make a nice gravy.
A lot of people put tomatoes in Swiss steak, but I don't like it.
Slow Cooker Tender and Yummy Round Steak

INGREDIENTS
3 potatoes, peeled and quartered
1 onion, chopped
6 carrots, peeled and sliced into 1 inch pieces
2 pounds boneless round steak
1 (1 ounce) package dry onion soup mix
1 (10.75 ounce) can condensed cream of mushroom soup
3/4 cup water
DIRECTIONS
Place the potatoes, onion, and carrots in slow cooker. Cut steak into six pieces, then place the meat on top of vegetables. In a mixing bowl, combine the soup mix, soup, and water; pour over beef.
Cover, and cook on Low for 7 to 10 hours.
I have done this before. Take the steaks and score them with a knife (tiny little cuts). Then let them soak in beer i have let them soak overnight before. After they have soaked then get some seasoned meat tenderizer put that on then throw them on the grill. you wont be able to taste the beer either
I usually put those tough cuts in the crock pot. After the meat is nice and tender, put a can of cream of mushroom soup in the crock pot and stir it around with the meat juices. Let it get nice and hot. Serve it over rice. YUM. Even my picky kids will eat this one.
Round Steak with Italian Sauce Recipe
Ingredients
- 1 pound round steak
- 2 tablespoons olive or canola oil
- 1/4 cup flour
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon paprika (optional)
- 1 teaspoon turmeric (optional)
- 2 cups bottled pasta sauce, preferably chunky type
- 1/2 cup wine * Leave the steak in one piece, or if preferred, cut into serving size pieces. Trim off excess fat. Mix flour, salt, pepper; add paprika and/or turmeric, if using. Rub and pat flour mixture into both sides of the meat.
* In a skillet large enough to hold meat without crowding, heat oil over medium-high heat. When pan is hot, add meat and brown on both sides. Regulate temperature to prevent burning.
* Add pasta sauce and wine. Cover and reduce heat to maintain a slow simmer. Cook until meat is very tender, 1 1/2 to 2 hours. Check occasionally to make sure the liquid hasn't evaporated; add water if necessary. Serve with polenta (see recipe for Basic Polenta) or mashed potatoes, and a green salad.
Round steak is known for being tough of course but it can be handled in other ways besides braising.
My husband has had dentures for over thirty years and he has a hard time eating meat period but I tenderize the chearper cuts in one of two ways.
My neighbor uses Coca-Cola to tenderized and I have tried that with salt ,pepper, and garlic. It is not bad! You place the meat in a bowl or large plastic zip lock bag, Pour enough Coke to cover then add the salt, pepper ,and garlic. Let it set in the fridge for about 30 minutes. Then remove the round steak from the bag and left relax for another 15 minutes.
If it is a really tough piece then take a metal meat mallet or if you do not have one a large rolling pin. Cover the meat with platic wrap or wax paper and pound firmly across the steak in one direction then the other. It will thin out as you pound because you are breaking up the tissue.
Once this is done to your liking you could dredge in flour and simple fry it . But there is another way that makes it even better. You can also mix up some grated Zucchini, 4 - 5 tablespoons of butter, garlic or onion, and bread crumbs in a bowl along with some seasonings you prefer and then spoon the mixture onto the steak, Roll up the steak like an eggroll, tie with a little string and bake in 400 degree oven for 20 minutes. Cover with foil for the first 13 minutes to keep the steak from cooking too fast on the outside.
Also as I mentioned before you can just dreged it in flour, heat a skilled with some vegetable oil, cut up two potatoes and one small onion. Cook them until the potatoes are almost done. Move the vegies to the outside edge of the skillet then place you floured steak in the center. Have your heat set on medium. Sear on one side of steak then the other. Then cook covered for about 5 minutes. Remove cover then set heat on low and turn the meat over once more. When the potatoes are done the steak should be.
6 tbs flour
1/2 tsp salt
1/4 tsp pepper
3 tbs crisco or your favorite oil
1 small onion sliced into rings
1 green pepper sliced into rings
1/2 tsp marjoram
1/2 tsp dried basil
2/3 cup white wine
2/3 cup water
1/2 tsp beef bouillon granules
Pound beef with a mallet (or a heavy pan will work) and cut into serving sized pieces. In a large ziploc bag mix 4 tbs flour, salt and pepper. add beef and coat.
Heat oil in skillet add beef and remaining flour mixture. Brown on medium high heat. Layer onions and peppers over browned beef. Sprinkle with basil and majoram. Add wine and bring to boil reduce heat cover and simmer for one hour or until tender.
Remove beef and veggies. Mix cold water with remaining flour until there are no lumps. Add to skillet and stir in beef granules. Cook on medium high heat until thickened. Serve with beef and veggies
Take the meat and tenderize. If you have a little white wine, about 1/4 cup combine it with one package of ranch dip seasoning. Marinate for 1 hour each side. In a bowl mix 1 tsp garlic salt 1/4 tsp black pepper 1/2 tsp onion powder and rub on both sides. preheat grill and turn to low and cook steak for 5 to 10 minutes each side. Serve with rice or potatoes.
cut the round steak into pieces - place in roaster along with chopped onion, celery, green pepper, salt (opt) & pepper, garlic powder to taste.
add some chopped tomato, can of tomatosoup and about 1/2 cup ketchup and about 1 cup water...... slow cook in oven. 3 to 4 hrs.
check every so ofter you may have to add a little water.
When done add a little water & flour mixture to make a gravy.
This is very good over rice or mashed potaotes/
