Filipino noodle dish?!

Filipino noodle dish?

Years and years ago I had a filipino friend who's mother would cook a filipino noodle dish, I can't remember all of what was in it, but... hopefully someone will be able to help me with that. I remember the noodles were thin, kinda "wavy". There was onion, carrot, and I'm pretty sure there was some type of meat; chicken or maybe beef. There wasn't any sauce, I don't think. Does anybody know what it's called? or have the recipe?


Answers:
Generically it was called, "Pancit", pronounced Pon-sit. There are many variations of Pancit.

My friend's Filipina wife taught me a simple Pancit recipe... no measurements just throw in as much as you like.

Sliced Onions and Carrots
Sliced Chicken
Canned Chicken broth
Soy Sauce
Rice Vermicelli noodles (soaked in warm water).

Sautee the chicken, onions and carrots and lightly season with salt and soy sauce.

Add the soaked and drained rice noodles and mix.
While it's cooking, add the chicken broth a little at a time (1/2 cup) and let it cook down. Do this a couple times until the chicken is cooked and the noodles are cooked... about 10 minutes.

Add more soy sauce if you like.

However, you mentioned wavy noodles which implies that it may have been wheat noodles instead of rice noodles.

Pancit canton

I believe it's pancit.

It is called Pancit Canton. ( Pronounce as pan sit can tun ) The meat you are referring to can be pork or beef but that will depend on you.
