I love fettucini, angel hair pasta, shells etc. Do any of you have any to die for pasta dishes? I would like to start cooking some (maybe even try making it from scratch) rather than the bag or box etc...


Answers:
I love pasta cooked with veggies, asparagus, snow peas, broccoli.. and tossed with olive oil... then add some fresh cut tomatoes on top!

1 package favorite pasta
1 bell pepper - red, yellow, or orange (or mix them)
1 small onion
4 cloves gralic
2 tablespoons olive oil (extra virgin)
1 tablespoon butter
Shredded parmasne cheese
Salt
4 tablespoons pasta water - reserved from cooking

Cook Pasta in boiling salt water - drain but dont rinse - return to pot.

As pasta cooks, dice the veggies. In a small sauce pan, heat olive oil and butter over high heat. When it starts to sizzle add in the veggies. Cook for about 5 minutes stirring often. Remove from heat. Add in pasta water stir well. Pour over pasta mixing well. Add cheese, if desired or serve on the side.

I love to take spinach fettucini with some mascarpone cheese and fresh herbs. I usually use garlic chives, tarragon, oregano. You can even jazz it up with some fresh lobster meat if you want to go all out

This is an INCREDIBLE recipe for pasta puttanesca..one of my favorite italian dishes...

1/2 lb spaghetti
1 (14 ounce) can Italian tomatoes
1/2 teaspoon sugar
4 tablespoons flat leaf parsley
4 garlic cloves, minced
1 teaspoon crushed red pepper flakes
1/2 teaspoon italian seasoning
1/4 cup olive oil
1 teaspoon anchovy paste (optional)
2 tablespoons black olives, minced
2 tablespoons green olives, minced
1 tablespoon capers
3 green onions, chopped
3 ounces red wine
parmesan cheese
fresh basil leaves, chopped

Sautee onions, garlic, and pepper flakes in the olive oil for about two minutes until fragrant.
Add tomatoes and half of their juices, sugar, wine, fresh parsley, olives, capers, anchovy paste,(or anchovies)and Italian seasoning.
Bring to a boil and simmer about 25 minutes, stirring occasionally, and adding more reserved juice if it becomes dry. Break up large chunks of tomatoes but please leave a chunky consistency, we're NOT making spaghetti!
While this is simmering, prepare spaghetti until done and drain.
Sauce should be ready now so combine pasta and sauce and toss well.
Top with parmesan cheese and fresh basil.





and this is my absolute favorite pasta side dish...i also love it because its quick and easy to make!

Creamy Garlic Penne
1 (1 lb) box penne or penne rigate, cooked as directed, drained and kept hot
2 tablespoons butter or margarine
2 garlic cloves, minced
2 tablespoons flour
3/4 cup chicken broth or beef broth
3/4 cup milk
2 teaspoons parsley flakes
salt and pepper, to taste
1/3 cup grated parmesan cheese

Melt butter and add garlic in a medium sauce pan.
Cook over medium for 1 minute.
Add flour and cook 1 minute, stirring contantly.
Stir in broth and milk and cook, stirring frequently, until sauce boils and thickens.
Add parsley, salt, pepper and cheese.
Stir until cheese is melted.
Toss hot pasta with sauce and serve immediately

MANICOTTI

1-bx manicotti shells
1 1/2 lb lean ground beef
1 med. onion finely chopped
1 clove garlic minced
1/2 cup italian style bread crumbs
1/4 cup chopped fresh parsley
1 egg beaten with fork
1-2 cups parmesan grated cheese(or other cheese)
1 can pasta sauce*
1)Cook manicotti shells according to pkg.
2) brown ground beef with onion and garlic in large fry pan over med-high heat. Drain off fat. Stir in crumbs, parsley, egg and 1 cup of Parmesan cheese. (sometimes I use cheddar cheese or mozzarella cheese) season with salt/pepper..
3) spread 1/2 cup pasta sauce over bottom of 9x13x2" baking pan..Fill manicotti shells with meat /cheese mixture. Arrange in a single layer and cover with remaining sauce. Sprinkle with remaining cheese...Cover with tinfoil.....bake in preheated 350F oven for 40 min, let stand for 5min then remove tinfoil (very hot steam so be careful)
Serve with green salad and french loaf as a complete meal* YUM
