The difference?

How do restaurants get their steaks and burgers so much better than when you cook your own?

Having followed 100s of recipes from cookbooks, nothing seems to come close.


Answers:
Repetition, the right grilling temp, meat to fat ratio. #1, Most people don't cook the same thing over and over again. #2, Most people just fire it up and slap them on and try to get them done waaayyy to fast. #3, Most people grab "whatever" ground "meat" or steak that's in the meat section and take it home without understanding the balance needed for full flavor, ring that bell and ask the butcher, it what he does for a living.

i don't think it's necessarily in the preparation of the meat, but the cut of meat that's available exclusively to restaurants.

I wish I knew! Alot of restaurants will cook with an open flame, so the steaks are grilled right in the back. Maybe its just the quality of the meats you are buying too... you get what you pay for!

I agree, steaks and burgers are better eaten out, even at fast food chains. Tell you something else that is better eaten out than at home....hotdogs. The Dog House hotdogs are to die for!

It's not just the meat it's the equipment too..

most of the restaurants cook over a flame so that makes a big difference in taste if you are trying it on the bbq then,,,that may be as close as you will get to the same "restaurant " taste....

Buy some meat at a deli some time. Real Argentinian steak for instance. Before cooking, set it out for an hour or so, so it can adjust to room temperature. Sear the meat shut on the outside quickly, then reduce heat immediately.

most home cooks don't cook 200 hamburgers or steaks back to back but restaurants do.so they have all of there temperatures set at exactly the right temp. also the marbaling in there meat could be better than that which most people buy.and here's the thing you can't cook a steak or burger too fast if you do you actually loose a lot of flavor and moistness.and most things taste better when you don't have to do the dishes.
