I'll skip all the details and give you the base formula and you can do the math. 4 onces of each per person. That equals 28 oz which equals 3 1/2 C per person.
Been there done that!
stick with finger foods....swedish meatballs, little smokies, cheese & crackers, vegi pizza (cold), maybe a fruit/vegi tray. As for dessert, sounds like you're on the right track. Skip the ice cream though...it'll be too much of a hassle getting in and out and too messy. For #'s, make 70-100 meatballs, a few packages of weinies, and you can eyeball it on the other things...don't do too much. I speak from experience....
The only rule I can ever remember is for meat....figure 1/4 lb per person.
I always have way too much food left over but then freeze and don't have to cook for a while.
Plan on having enough protien for 4-6 people per pound of meat/cheese - so you need a combined total of 25 lbs of meat nad cheese. I woulf do a 10 lb. ham, 7-8 lbs of meatballs and 7-8 lbs of cheese total. For sides and desserts - count on 6-8 people per pound. Use the suggested servings on the pasta and green bean packages to make sure you are making enough. 1/2 sheet cake should serve 40 and if the other cakes are 8-9" rounds then you will have another 24 servings(12 serving per cake). For the jello and ice cream - use the # of servings on the package.
Hope this helps !
