Cooking for 100?!

Question:

Cooking for 100?

I'm having a graduation from 2-5 for 100 people I am thinking of having ham ,swedish meatballs, pasta salad, and green bean casserole also cheese and crackers . 1/2 sheet cake and to normal size cakes, ,jello or ice cream .I wondered if this is enough to have .And would any one be able to help me with the amounts of each thing .

Answers:
I'll skip all the details and give you the base formula and you can do the math. 4 onces of each per person. That equals 28 oz which equals 3 1/2 C per person.
Been there done that!

stick with finger foods....swedish meatballs, little smokies, cheese & crackers, vegi pizza (cold), maybe a fruit/vegi tray. As for dessert, sounds like you're on the right track. Skip the ice cream though...it'll be too much of a hassle getting in and out and too messy. For #'s, make 70-100 meatballs, a few packages of weinies, and you can eyeball it on the other things...don't do too much. I speak from experience....

The only rule I can ever remember is for meat....figure 1/4 lb per person.

I always have way too much food left over but then freeze and don't have to cook for a while.

Plan on having enough protien for 4-6 people per pound of meat/cheese - so you need a combined total of 25 lbs of meat nad cheese. I woulf do a 10 lb. ham, 7-8 lbs of meatballs and 7-8 lbs of cheese total. For sides and desserts - count on 6-8 people per pound. Use the suggested servings on the pasta and green bean packages to make sure you are making enough. 1/2 sheet cake should serve 40 and if the other cakes are 8-9" rounds then you will have another 24 servings(12 serving per cake). For the jello and ice cream - use the # of servings on the package.

Hope this helps !

ribs potatoes salad ribs baked bean slaw

well lets get started , ham 4oz per person(25lbs), meatballs 3 per person(300 meatballs),pasta salad 1/4 cup per person ( 1.5 gals),green bean casserole(take your recipe for 5 people and times that by 15), cheese and crackers a medium tray with back up if needed, cake 1/2 sheet cake feeds 25 people, Jello yes ice cream no unless they are individual servings. Suggestion use foil pans and pan up the following the night before meatballs, green beans, pasta salad, cheese and crackers. Have fun and enjoy
