Here is one that my Dad found. Be VERY careful it can get out of control with the Jalapenos! But boy is it good!
El Cid Chili
? 2 tablespoons olive oil
? 2 pounds sirloin steak, cut into 1-inch cubes
? 1/2 pound ground beef
? 12 ounces chorizo sausage, casing removed, cut into 1/2 cubes
? 1 large yellow onion, coarsely chopped
? 1/4 cup chili powder
? 1 tablespoon garlic salt
? 2 teaspoons cumin
? 1 teaspoon dried basil
? 2 (14.5-ounce) cans beef broth
? 2 (14.5-ounce) cans whole tomatoes, drained
? 1 cup cilantro, chopped
? 1 cinnamon stick
? 3 bay leaves
? 2 green jalapenos, slit lengthwise 3 times each
? 1 tablespoon yellow cornmeal
? Salt and pepper, to taste
? Garnish with Cheddar and sour cream
Method:
Place oil in a large, heavy pot over medium heat. Brown the sirloin in batches. Remove to a bowl with a slotted spoon. Add ground beef, chorizo and onions to the pot and brown. Make sure to break up the meat. Return sirloin to the pot. Stir in remaining ingredients, except for garnishes. Cut three slits in each pepper from top to bottom but not all the way through to the bottom. Bring to a boil, reduce heat, and simmer for 2 hours. Stir occasionally, breaking up tomatoes. Before serving, discard cinnamon stick, bay leaves and jalapenos. Garnish, if desired.

nobody has reviewed it yet, probably because it may sound strange to some, but everyone that i have made it for absolutely LOVES it! If you dont like it too hot, just replace the habanero with jalapeno or another less spicy pepper. Enjoy!

If you need beans, add them at the end, as much as you see fit.
Ingredients:
1-1/2 pounds stew meat cut into thin pieces
2 large onions, chopped
4 large cloves garlic, minced
1 bell pepper, diced
1/2 pound chorizo sausage, casings removed and meat separated
1/4 cup green jalapeno salsa
1 tablespoon chili powder
2 teaspoons ground cumin
2 teaspoons dried oregano
2 teaspoons cocoa powder
1 teaspoon salt
1 28-ounce can diced tomatoes, undrained
6 green onions, sliced (with tops)
1 bunch fresh chopped cilantro
Prep:
Cook the meat, onions, garlic and bell pepper in a 5-qt. saucepan or Dutch oven, over medium heat, until beef is browned; drain and set aside
Brown chorizo sausage (do not drain) and then add the drained meat mixture. Stir in remainder of ingredients, except beans, green onions and cilantro. Bring to a boil; reduce heat.
Cover and simmer 1 hour, stirring occasionally.
The last 20 mins:
Stir in beans, green onions and cilantro. Heat to boiling; reduce heat. Simmer, uncovered, until desired thickness, stir
This is one that I have been making for about 10 years. It is a little daunting to look at but worth the work. I adjust the fresh peppers depending on how hot they are
1/3 cup cumin seed
2 tbs coriander seed
2 ancho chiles (dried)
2 mulato chiles (dried)
4 pasilla chiles (dried)
4 lbs chuck roast cut into cubes
1/2 lb bacon cut in to strips
1/2 lb diced ham
1 1/2 tbs corn oil
2 lbs onions (sweet) diced
3/4 cup celery diced
1 cup ancho chile powder
1/2 tsp cayenne pepper
3 bay leaves
3 jalapeno peppers (seeded and minced)
3 serrano peppers (seeded and minced)
1 small can chipotles in adobo sauce chopped
2 smoked ham hocks
2 cans (35 oz) italian tomatoes drained
1/2 cup golden tequila
2 cups beef stock
1/2 tsp rosemary
1 tsp oregano
preheat oven 500
in a skillet toast the cumin and coriander seed until you can smell it. Remove and grind.
Toast the dried peppers in the oven on a cookie sheet until the puff up. Remove from oven, deseed and grind to a powder
In a very large stock pot heat oil, beef, bacon and ham until fat is rendered. Add onions and cook until tender. Add celery, ground chiles and ancho chile powder and cook until celery is soft. Add remaining ingredients simmer on low for 4 hours. In the last hour if desired add 2 large cans of dark kidney beans with their juices
Chili with Cheesy Cornmeal Dumplings
12 ounces lean ground beef
1 cup chopped onion
1/2 cup chopped green bell pepper
2 garlic cloves, finely minced
1 tablespoon chili powder
1 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
1 (15 1/2-ounce) can dark red kidney beans, rinsed and drained
1 (14 1/2-ounce) can diced tomatoes
1 (8-ounce) can tomato sauce
1/2 cup water
Cheesy Cornmeal Dumpling (recipe follows)
1. In a large saucepan or Dutch oven, cook ground beef, onion, bell pepper, and garlic until meat is brown and onion is tender. Drain fat. Stir in chili powder, cumin, salt and black pepper and cook for 1 minutes. Add the beans, undrained tomatoes, tomato sauce, water. Bring to boiling; reduce heat. Simmer, uncovered, for 5 minutes.
2. Drop Cheesy Cornmeal Dumplings by tablespoonfuls onto simmering chili. Cover and simmer about 20 minutes more or until a wooden pick inserted into dumpling comes out clean.
Makes 4 servings.
Cheesy Cornmeal Dumplings
1/2 cup all-purpose flour
1/2 cup (2 ounces) shredded cheddar cheese
1/3 cup yellow cornmeal
1 teaspoon baking powder
1/4 teaspoon salt
1/8 teaspoon black pepper
1 large egg, beaten
2 tablespoons milk
2 tablespoons vegetable oil
1. In a medium mixing bowl stir together the flour, cheese, cornmeal, baking powder, salt and pepper.
2. Combine egg, milk and oil; add to flour mixture. Stir with a fork just until combined.
1 lb ground beef cooked and drained added back to pot,add diced onion..salt, pepper, add one can of red kidney beans (rinsed and drained), and one can of tomatoes (crushed or seasoned or whole) add 2-3 tlbsp. of chili powder stir, taste....simmer with lid on for about 45min...make up some garlic bread and toss up a green salad*
My boyfriend's parents own a farm with a huge garden so every year I freeze 2 cup bags of chopped tomatoes, onions & garlic mixed together. Brown 1 lb hamburger and/or sausage with 1 onion chopped, then drain. In small stockpot, add meat, 2 cups chopped or thawed tomatos, 1 can chili beans & 1 pkg of your favorite chili seasoning ( I use the one in the brown bag in the meat section) Slowly pour in 2/3 can of beer & add 1 stick butter and 1 tsp cinnamon. Simmer over low heat for a couple hours, stirring every so often. Serve with homemade cornbread.
Brown as much ground meat as you like.I put beans in my chili.Put the drained and rinsed cook beef in your crock pot.Now add 1-diced onion,garlic powder to taste,1-can Roi-tel tomatoes,1-can each of pinto,black,and kidney beans(rinsed and drained),1-pack of chili o mix,1-small can tomato sauce,1-can chicken broth.Cook for 4 hours on hi.Then take a package of Hidden Valley Original ranch dressing mix,and sprinkle it in pot.Stir and let cook 1 hour more.You can cook this on the stove as well,just add the ranch mix for about the last 30 mins.Great and easy...
