Answers:
Good-quality ginger root should have smooth light brown skin with a light sheen and white flesh. Pick the roots with the least number of knots and/or branching.

Store ginger root dry in your refrigerator. For longer storage, peel the ginger and cover with vinegar or sherry wine before refrigerating. You can also freeze ginger root for up to three months.

Avoid product that is small, wrinkled or soft.

If you peel it first - you can freeze it.

Keep them in a ziplock bag in the refrigerator and it will hold for at least a month.

it freezes really well for a long time

I store ginger root in a baggie, in the fridge. It usually lasts a couple of months.
