Muffins came out too thick. any suggestions?!

Muffins came out too thick. any suggestions?

here's the recipe i used and i followed it perfectly except for one thing instead of just white flour i did half white flour and half wheat flour. they came out all lumpy and not rounded at all. any suggestions on what to do to fix this?

Pumpkin date muffins

Cook time 18 min
Makes 12 muffins

1 3/4 c flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp ground cinnamin
1/4 tsp ground nutmeg
2 eggs, beaten
1 can unsweetened punkin
1 cup chopped dates
1/2 c packed lite brown sugar
3 tbsp EVOO

heat oven 425. Line cups with liners in large bowl combine first 6 ingredients. Make a well in center set aside in a small bowl combine remaining 5 ingredients. Pour these ingredients into well; mix until moist and slightly lumpy. Pour batter into cups 3/4 full.

With whole wheat is thicker than white in general. This article gives a good bit of information about how to make recipes work with a 50:50 ratio as you did with the flour. It sounds like you need to up the liquids a bit, since Whole Wheat absorbs more than white flour.

The wheat flour is heavier and has more gluten in it which makes them heavier. Next time don't change the recipe,use all purpose flour,it should be fine.

Since the wheat flour is heavier it might still be a bit raw. check to see they are done with the toothpick and the only way to fix them is frosting. Sorry.

Hi there, if you'd like to keep the flour mix -- in which case I'd first use just ? wholemeal flour, rather than ? and ?, which will still give you more texture without making it all too heavy -- raise your leavening to 2 tsp baking powder with the same ? tsp bicarb. The original recipe is already rather light on leavening for the density of the rest of the mixture, so you'll definitely need more lift with a denser mixture still.

Lumpy,then add a bit more water and you just left too many lumps.I would fill the muffin cups only 1/2 full,they will not be as thick then.Hope this helps.
