Easy Mint Chip Ice Cream

INGREDIENTS
1 (14 ounce) can sweetened condensed milk
2 tablespoons water
1/4 teaspoon peppermint extract
3 drops green food coloring
2 cups heavy whipping cream, whipped
1 cup miniature semisweet chocolate chips

DIRECTIONS
In a large bowl, combine milk, water, extract and food coloring. Fold in whipped cream and chocolate chips. Pour into a foil-lined 9-in. x 5-in. x 3-in. loaf pan. Cover and freeze for 6 hours or until firm. Lift out of the pan and remove foil; slice.

sandn-- here is a good chocolate ice cream recipe and it is fast and easy .
Chocolate Milk Ice Cream
1/2 -- gallon chocolate milk
1 -- pint whipping cream
2 -- cups sugar
1 -- can sweetened condensed milk
Method
In a large bowl mix all ingredients untill
thoroughly blended. Freeze in ice cream freezer.
You may need to add more milk to reach the fill line in some freezers.
Also great with chocolate syrup added (your choice) hope you like it as much as I do. jim b

Coconut Ice Cream
1 cup milk
1 (14 ounce) can cream of coconut
1 1/2 cups heavy cream
1 1/2 cups sweetened flaked coconut (optional)

Combine the milk and cream of coconut in the container of a food processor or blender, and mix thoroughly. Stir in cream and flaked coconut.
Pour into the container of an ice cream maker, and freeze according to the manufacturer's instructions.

Peach Ice Cream

6 eggs, beaten
3 1/2 cups white sugar
10 fresh peaches, pitted and chopped
4 cups heavy cream
2 cups half-and-half cream
2 teaspoons vanilla extract
3/4 teaspoon salt

In large bowl, mix together eggs and sugar until smooth; puree peaches in blender or food processor and stir 5 cups of puree into egg mixture. Stir in cream, half-and-half, vanilla and salt and mix well.
Pour mixture into freezer canister of ice cream maker and freeze according to manufacturer's instructions.

Cinnamon Ice Cream

1 cup white sugar
1 1/2 cups half-and-half cream
2 eggs, beaten
1 cup heavy cream
1 teaspoon vanilla extract
2 teaspoons ground cinnamon

In a saucepan over medium-low heat, stir together the sugar and half-and-half. When the mixture begins to simmer, remove from heat, and whisk half of the mixture into the eggs. Whisk quickly so that the eggs do not scramble. Pour the egg mixture back into the saucepan, and stir in the heavy cream. Continue cooking over medium-low heat, stirring constantly, until the mixture is thick enough to coat the back of a metal spoon. Remove from heat, and whisk in vanilla and cinnamon. Set aside to cool.
Pour cooled mixture into an ice cream maker, and freeze according to the manufacturer's instructions.

Vanilla Ice Cream

1 cup heavy cream
1 cup light cream
1/2 cup sugar
3/4 teaspoon vanilla extract
1 pinch salt

Stir until sugar dissolves. Freeze according to ice cream freezer's directions.

Variations:

Chocolate: Add 1/4 cup chocolate syrup or 3 tablespoons of cocoa and 1/8 teaspoon of cinnamon.

Mocha: Add 2 tablespoons instant coffee and 1/4 cup chocolate syrup.

Chocolate Chip: Add 1/4 cup mini chocolate chips.

Peanut Butter: Add 1/2 cup smooth or chunky peanut butter.

Raspberry Ice Cream

INGREDIENTS:
1 cup sweetened condensed milk
1/4 cup water
2 cups fresh raspberries, crushed (put through food mill or sieve to remove seeds, if desired)
2 tablespoons lemon juice
1/2 cup heavy cream

PREPARATION:
Combine condensed milk and water; add raspberries and lemon juice. Chill thoroughly.
Whip cream until it holds a soft peak; fold into the chilled mixture. Pour into freezer tray. When mixture is half frozen, scrape away from sides and bottom and beat until smooth but not melted.
Freeze until firm. Serves 6.
