Oil or butter for Biscotti Recipe??

I have been looking up biscotti recipes and have found some recipes using butter and some using olive oil. Which ingredient will make a softer (not hard a a rock) and tastier biscotti?


Answers:
Butter will make it tastier. Olive oil will give it a different flavor that may not be the best for a dessert and change the texture of the biscotti.

Follow what the recipe calls for would be my rule of thumb.

Biscotti are not meant to be soft, they are purposely made hard so that you can dunk them in coffee. But I prefer butter.

Butter is a better flavor, especially for the sweet biscotti. Olive oil would be better for the savory.
As far as a soft biscotti? There is no such thing. Biscotti is rock hard, thus the double baking. If you'd really like to have it a little less hard, I guess just don't bake it that second time.
