Question:

What is the substitution of maltose? Can I use honey to substitute it??

Answers:
Maltose is a disaccharide. Other types of disaccharide include: lactose, malt sugar, milk sugar, saccharose, sucrose.

But if it is for cooking then sure, honey will do

My diabetic nurse told me that anything with the letters "ose" on the end of it ie maltose, dextrose, lactose, glucose ........ are all forms of sugar which should be avoided at all costs or at the very least treated with great caution.

Sugar occurs in all kinds of things in all kinds of forms such as milk, fruit, some vegetables, honey - just because it is natural does not make it much better for you.

However, to answer your question, if you are not diabetic then go ahead and use honey in your cooking.
