i need a good chicano style green chile recipe

Ingredients:

2 pounds pork stew meat, cut into 1-inch cubes
2 tablespoons vegetable oil
1 large onion, chopped
1 teaspoon chopped garlic
2 cups frozen chopped New Mexico green chile
2 large tomatoes, peeled and chopped
2 potatoes, peeled and diced
1/2 teaspoon ground cumin
3 cups chicken or beef broth
Salt to taste

In a saucepan, brown the pork in the oil. Add the onions and garlic and sauté until the onion is soft. Remove the meat and onion minture from the pan. Add 1 cup water to deglaze the pan.

Combine the pan drippings and the rest of the ingredients in a large pot or Dutch oven, bring to a boil, reduce the heat, and simmer for 2 hours, or until the meat is very tender and starts to fall apart.

The recipe above sounds great but personally I would add some Queso Blanco or Para Freir (Mexican cheeses) and stuff the mixture into roasted green chilies
And if it suites you, breaded and deep fried.

Roast and peel each chile and let them cool. *If fresh chiles are unavailable, use canned whole green chiles and flour them before dipping in batter.

Mexican Mashed Potatoes With Green Chiles:

4 servings

1 lb russet potatoes, peeled and cut into 1/2 inch chunks
2 tablespoons butter or margarine
2 ounces canned diced green chilies
1/2 cup shredded cheddar cheese
1 tablespoon cilantro, chopped
1/8 teaspoon salt
1/4 cup skim milk

1. Boil potatoes in salted water until tender. Drain.
2. Transfer potatoes to a bowl and mash.
3. Mix in remaining ingredients.
4. Season to taste with salt.
5. If needed, add in a little more milk.
6. Feel free to adjust the cheese and cilantro level to your liking!
