Can someone share a good recipe for birthday cake frosting?
I need a recipe that does not use Crisco (or any other shortening) but holds well on its own in hot weather? It also has to be kid-approved (the cake is for my 3-year old's birthday)

I used a white & strawberry icing combination for my child's 2nd birthday cake last week and this recipe turned out to be quick & easy and healthy for kids too.
STRAWBERRY ICING:
2/3 cup ripe Strawberries; sliced, fresh
2 Egg whites; unbeaten
1 1/2 cup Sugar
5 tb Strawberry puree
3/4th teaspoon Light corn syrup
1/4th teaspoon Lemon juice
METHOD:
1. Press strawberries through a fine wire sieve
2. Combine egg whites, sugar, 5 tablespoons strawberry puree, corn syrup, and lemon juice in top of double boiler, beating with rotary egg beater until thoroughly mixed.
3. Place over rapidly boiling water, beat constantly with a rotary egg beater, and cook till frosting stands in peaks ( approximately 5-7 minutes).
4. Remove from boiling water and beat until thick enough to spread.
For the white Icing:
6 oz. Water
4 oz. granulated sugar
1/2 teaspoon cream of tarter (If you don't have this in handy, then use white vinegar)
8 oz. Egg Whites
METHOD:
1. Add the water, sugar and cream of tartar in pan and cook.
2. While syrup mixture is cooking, whip egg whites until fluffy in mixer.
3. As syrup has reaches 200-220 F, take it off the heat and add it slowly to whipping egg whites (If using vinegar add at this stage).
4. Reduce mixer to medium speed until icing stiffens, about 10 minutes. Add vanilla or any other flavor or colors of choice before removing icing from the mixer.
Simple figure piping and flowers is quite easy with this recipe. This icing is very light and very easy to use for figure piping.

* 1 cup boiling water
* 1 cup semisweet chocolate chips
* 1/2 cup butter, softened
* 1 cup confectioners' sugar
* 2/3 cup unsweetened cocoa powder
* 1 teaspoon vanilla extract
* 2 tablespoons milk
* 1 tablespoon strong brewed coffee
DIRECTIONS
1. In a large mixing bowl, add the following ingredients one at a time, beating well after each addition: eggs, white sugar, 2 tablespoons butter or margarine, oil, 1/2 cup cocoa, buttermilk and vanilla. (Instead of buttermilk you can use 3 tablespoons softened butter or margarine, 1/2 cup milk and 1 tablespoon vinegar.)
2. Sift the flour, baking powder, baking soda, and salt; add to the sugar and egg mixture. Blend well. Fold in the boiling water.
3. Place batter in two greased and floured 8 inch round cake pans. Sprinkle 1/2 cup chocolate chips over each pan. Bake at 350 degrees F (175 degrees C) for 25 minutes. Cool.
4. To Make the Icing: Begin by beating together 1/2 cup butter or margarine, confectioners' sugar and 2/3 cup cocoa; add 1 teaspoon vanilla, milk and coffee. Beat until very smooth. Add more confectioners' sugar until you obtain the consistency you want. Spread on cake.

Try making Italian buttercream.....it's light, you can add pretty much any flavor to it and it holds up great in the hot weather. If you need a recipe e-mail me and I will pass one along.
Here are a few:
Birthday Frosting:
1 cup mini marshmallows
1 cup sugar
1 egg white
1/4 tsp. cream of tartar
1 tsp. vanilla
1/2 tsp. other flavoring of your choice (I like almond)
1/2 cup boiling water
Place over hot water the mini marshmallows. In deep bowl place the sugar, egg white, cream of tartar, and flavorings. Pour over this the boiling water. Beat at high speed for 8 minutes. Add the softened marshmallows and beat another 2 minutes at high speed. Frost cake.
Quick Chocolate Frosting:
1 cup sugar
5 Tbsp. oleo
1/3 cup milk
1/2 cup chocolate chips
Boil sugar, oleo, and milk for 1 minute. Stir in chocolate chips and blend until smooth. Cool slightly until spreading consistency.
Here is one more easy chocolate one:
Devil Cream Frosting
4 Tbsp. powdered chocolate drink mix
1/4 cup powdered sugar
1 tsp. vanilla
2 cups cool whip
Whip all together until stiff. Chill.

Get the tubbed frosting and mix one box confectioners sugar per tub. maybe more. You will see it start to thicken.
