Answers:
Here is one that an e-pal of mine gave me to share with you.....enjoy!

2 cups gram flour
1 tablespoon almonds, powdered
1 tablespoon cashews, powdered
1/2 cup ghee
1/2 teaspoon cardamom, powdered
1/2 cup sugar, coarsely ground

Coarsely grind the cashews and almonds.
Keep aside.
Melt ghee in a wok.
Add besan (gram flour).
Cook on low heat till besan is fragrant and well cooked.
It takes only about 5-8 minutes.
Let it cool for a while.
Add powdered nuts, cardamom powder and sugar.
Mix well.
Shape into round balls (a little bigger than the size of a walnut) and store in an airtight container.
Serve after a few hours for greater taste!

Chickpea Sweet Balls Recipe

Sweet, Spiced Balls of Chickpea Flour

Mix together in a large saucepan:
2 1/2 cups chickpea flour
1/2 cup vegetable oil
1/3-1/2 cup ghee (see recipe below)
powdered almond (opt.)

Sauté over low heat, stirring frequently, for 20-25 minutes until softened to the consistency of peanut butter and slightly browned.

Take off the heat and cool for about 5 minutes, then add:
2 cups granulated sugar
1/2 teaspoon cardamom powder

Mix well. Let cool for as long as possible, at least 30-60 minutes. The balls are easier to form when the ingredients are room temperature. Make into 1” balls by squeezing about 1 heaping teaspoon of dough back and forth from one hand to another. Continue this process until each ball is firm and shiny. The mixture will be crumbly at first, and it takes a number of passes between your hands for the ball to form. If you are finding the mixture too crumbly, be sure you have let it cool enough. Some people find using a melon baller helps the process. As a last resort, add a little more melted ghee.

How To Prepare Ghee

Ghee is a healthy alternative to butter and oils. It is available at natural foods and Indian product stores or you can prepare the ghee yourself:

Makes 1 ? cups
45 min, 5 min prep
1 lb unsalted butter
cheesecloth

Heat unsalted butter in a stainless steel, thick-bottomed sauce pan, over a low-medium flame.
Allow the oil (ghee) to separate from the milk solids.
Periodically remove the foam that accumulates at the top.
When the oil is clear in color, the ghee is done.
Remove from the stove and allow to cool for a while, than carefully pour off the ghee into a wide-mouthed jar through several layers of cheese cloth secured to the opening of the jar or through a fine mesh strainer.
Cover the jar and store at room temperature.

Besan ki Mirchi

Ingredients:
250 gm green chillies
100 gm besan
salt to taste
2 gm red chilli powder
2.5 gm turmeric powder
pinch of amchoor powder
5 gm asafoetida
10 gm roasted cumin seeds
oil

Method: Slit and deseed the green chillies.

Take a little oil and add the asafoetida, besan and the rest of the masalas and cook on a very low flame, till it turns a golden brown in colour.

Fill this besan mixture in the green chillies.

Again take oil in a kadahi and add the asafoetida, put the stuffed green chillies and cook for a while till the chillies get a little soft.

Boondhi Raita

Serves 3-4.
1/4 cup besan flour
vegetable oil for frying
1 1/2 cup yogurt
1/4 cup milk
1/2 cup water
salt, pepper, chat masala to taste

Make a pouring paste of the besan and water. Heat the oil and drop paste into hot the oil through a slotted spoon to get little drops falling at a time (these are bhoondi). Remove the drops when golden brown and dry on a paper towel to remove extra oil. Soak the drops in warm water. Add milk, salt, pepper, add chat masala to yogurt Squeeze water out of boondhi and add to yogurt.

Classic Hummous

Ingredients
・One (19 oz.) can cooked chickpeas (garbanzo beans), drained and rinsed OR 2 cups cooked chickpeas
・1 tbsp. tahini (sesame seed paste)
・1 tbsp. lemon juice, about half a lemon
・1 large clove garlic, roughly chopped
・1-2 tbsp. water, to thin, if necessary

Instructions:
1.You can use either a hand blender or food processor to make this hummous. If using a hand blender, you'll need at least a two cup capacity cup. Either way, add about half the chickpeas and start to blend.
2.Gradually add in the tahini, lemon juice, garlic, but not the water.
3.Keep blending until the volume reduces slightly and the texture becomes more smooth, then add the rest of the chickpeas.
4.Blend until desired consistency is reached - chunkier is good for sandwiches, while a thinny dip may be desired for pita chips.
5.Add 1-2 tbsp. water if necessary while blending.
6.Stir in any additions, garnish, and serve!

Chickpea Pancakes

Ingredients (get from Indian grocery store)
1 Cup Besan (Chickpea Flour)
1 Carrot Grated
1 Green Chili: Finely Chopped
1/2 Medium Onion Finely Chopped
Fresh Coriander: Finely Chopped
3 inches bottle gourd grated
Water to add
Salt and Red Chilies to taste.
Oil to fry

Method:
add all the ingredients together except water.
Add water slowly and make the batter to a consistency of soup. / crepes batter.
Beat the batter for 2 mins with hand.
Heat a griddle.
Put 1 tsp oil over it and spread it. Then lightly remove the excess oil by wiping with a towel.
Put one big ladle of batter and spread it on griddle.
The heat should be medium so that it doesn't burn.
put 1 tsp oil on the corners of the pancake.
Once it gets browned from one side turn it over and cook from the other side.
Put one more tsp of oil.
Once brown spots appear take it off from the griddle.
Serve hot with tomato ketchup or tomato salsa/ hot sauce or coriander chutney.

Carrot Cookies With Besan

These cookies use besan/gram (chickpea) flour and whole wheat flour and contain no salt. The besan lends a somewhat nutty flavor, and shortening keeps the cookies soft.

12 cookies
27 min 15 min prep

1/4 cup shortening
1/2 cup sugar
1 egg
1 teaspoon vanilla extract
1/2 cup besan
1/2 cup whole wheat flour
1 teaspoon baking powder
1/2 cup finely grated carrots

1.Peel and finely grate one full carrot.
2.Cream together the shortening and sugar.
3.Mix in the egg.
4.Add in the flour and baking powder.
5.Fold in finely grated carrot until blended well.
6.Drop by spoonfuls onto greased cookie sheet.
Bake at 375 for 10-13 minutes.
