KFC Original Fried Chicken.

1 frying chicken, cut into frying pieces
The 11 herbs and spices
2 eggs, well beaten
2/3 cup milk
Vegetable oil to cover bottom of your skillet; about 1/2 inch deep.
1. Combine eggs and milk. Set aside.
2. Combine flour with the Italian dressing and soup mix.
3. Dip chicken pieces in milk-egg mixture and roll them in the
flour-seasoning mixture. Repeat procedure.
4. Fry pieces over medium heat for 25 to 30 minutes, turning often.
5. Remove from fire. Drain and serve.

Chicken Like the Colonel's

-----ELEVEN SECRET SPICES-----
1 tablespoon Rosemary
1 tablespoon Oregano leaves
1 tablespoon Powdered sage
1 teaspoon Powdered ginger
1 teaspoon Marjoram
1 1/2 teaspoons Thyme
3 tablespoons Packed brown sugar
3 tablespoons Dry minced parsely
1 teaspoon Pepper
1 tablespoon Paprika
2 tablespoons Garlic salt
2 tablespoons Onion salt
2 tablespoons Powder chicken bouillon*
1 package Lipton tomato cup-a-soup mix
* or 4 cubes mashed There are actually 11 spices in the above combination, but an additional 3 ingredients were necessary to derive that special flavor.

Place all ingredeints in blender with on\off spped for 3-4 minutes to pulverise, or rub through a fine strainer.

Store in an airtight container so it will not lose potency. Makes about 3/4 cup. To use with flour: Add 1 oz. mix to a cup of flour for coating chicken.

Description This recipe used to call for Fines herbs, but most people have difficulty in obtaining them. See www.penzeys.com for the spice.

1 Broiler fryer - cut up
3 C. Water
1 Tbsp. Salt
1 tsp. MSG
2 tsp. Onion Powder
2 pkg. DRY Instant Chicken Broth (Do Not Use Canned)
2 tsp. Seasoned Salt
1/2 tsp. Black Pepper
1 C. Flour Methods/steps
1. Cover chicken with mixture of water and salt. Chill in bowl for least 1 hour.
2. Combine herbs, onion powder, seasoned salt, instant chicken broth, and pepper in a blender and mix well. Place this mixture in a bowl. Add the flour to this bowl. Mix flour and seasonings well.
3. Remove chicken from water, and dip it into the flour mixture coat well. Place coated pieces on a plate for 5 minutes.
4. Melt enough shortening or salad oil to make 1 inch depth in a large skillet. Heat to 375 degrees. Fry chicken pieces turning once, every 5 minutes, be sure to cook chicken until done. Lift chicken out and drain on paper towels. You can keep the chicken warm in the oven by placing it in the oven, and serve when all pieces are finished cooking.
MSG stands for Monosodium Glutamate. It is a spice, found in your grocery store. It can be sold as MSG or under the brand name "Accent". Some people are extremely allergic to MSG, over 98% of the population is not. It serves to make flavors stronger, and almost pop right out at you.
. Fines herbs used to be used more frequently many years ago. Fines herbs was a poultry seasoning. Since so many people have difficultly in obtaining the herb, it has been removed from the recipe. If you can access Fines herbs add 2 teaspoons to the flour mixture.

Pigeon. Fried in grease that has been there for the past decade. Plus whatever gets on it when they drop it on the ground.

Ingredients are a trade secret, although some here have posted recipes that probably come close.

As for cooking methods, KFC uses a custom-designed pressure cooker.

Method: humm, it's cook in pressure cooker for only 5 minutes to get very tender meat...as I do often at home..

Than soak in milk also to get good tender meat., but also to have the flour sticking on the meat ., to fry it after.

Now: to cook again in deep fry: I saw something in pakistan ., people were cooking the fry chicken in the oil (in the presser cooker) but gee i would be scare to do that at home INSIDE ..but outside...???

you prepare your flouer with all kind of spice you like,, to give the taste you want:

if you like it spicy: hot pepper, salt, black pepper, ginger, cilintro, all spice, garlic , tumeric, what i do ., when spicy., i have all kind of spicy ingredient..,just add dry to dry flower and liquid spicies one to liquid...

you fry it in hot very hot oil...

After the chicken is done from : pressure cooker., let it thaun a bit., the juce will go back in the meat ., and giving a very good taste...to the meat.
than., after soaking in the milk and egg beating., pass on the flouer ., reasoak again in milk and egg and again in the flower pre-spice .,

for soft ingredient not spicy,, add to flower anything goes with chicken., a bit of all..
what i do have., i did, grinded together all kind of spice going with chicken and i keep it in a container..when i am cooking chicken i use that gee the taste is sooo good

grind, ginger, garlic, (dry) pepper a bit, chicken dry flavor, put in what you enjoy: romarin, fenoul, celery sead., cumin, tumeric, sage, name it.... take what you like and do a mix..

i do the same with beef...lamp, that making a soooooo good gravy ..too.

ok after soaking 2 or 3 times or 4 times,, fry it ...enjoy..

in pakistan,, they take off all the chicken skin..never eat it..
this is good by dry a bit....
