(3/4 cup) Quaker? Oat Bran hot cereal, uncooked 10 mL
(2 tsp) lemon juice
2 mL
(1/2 tsp) garlic powder 15 mL
(1 tbsp) water
1 mL
(1/4 tsp) pepper 6 boneless chicken
breasts
2 mL
(1/2 tsp) salt 50 mL
(1/4 cup) snipped fresh
parsley OR
1 egg white, lightly
beaten 7 mL
(1 1/2 tsp) dried parsley
flakes

Quaker? Oat Bran can be used to replace all of the flour, cracked crumbs, croutons, crushed cereal or bread crumbs in your favourite chicken, fish, or vegetable coating.

Instructions:
Heat oven to 180°C (350°F). In a shallow dish, combine Quaker? Oat Bran, garlic powder, pepper, parsley, and salt; mix well. In another shallow dish lightly beat egg white and water together. Dip chicken into egg mixture, then coat with oat bran mixture. Place coated chicken pieces on a broiling pan. Sprinkle lemon juice evenly over chicken pieces. Bake 50-55 minutes or until chicken is tender and coating is lightly browned. Remove chicken to serving platter. Squeeze lemon wedge over chicken before serving, if desired.

Yield: 6 servings.

Saucy Stuffed Peppers

medium-sized green peppers 1 mL
(1/4 tsp) pepper
225 g
(1/2 lb) pork sausage meat 250 mL
(1 cup) Quick Quaker? Oats (uncooked)
450 g
(1 lb) lean ground beef 150 mL
(2/3 cup) tomato juice
125 mL
(1/2 cup) chopped celery 1 can
tomato soup
50 mL
(1/4 cup) chopped onion 50 mL
(1/4 cup) milk
5 mL
(1 tsp) salt

Instructions:
Cut 0.5 cm (1/4") slice from top of each green pepper and reserve; remove seeds. Cook green pepper in enough boiling water to cover; about 5 minutes; drain. Sauté pork sausage meat and beef until lightly browned. Drain well. Combine meats, celery, onion, cut green pepper tops, salt, pepper, Quick Quaker? Oats and tomato juice. Fill green peppers with mixture. Stand upright in shallow baking pan; add small amount of water. Bake in preheated oven at 180°C (350°F) for 45-50 minutes. Serve hot with tomato sauce made by heating together one can of tomato soup and 50 mL (1/4 cup) milk.

Yield: 6 servings.

Quaker Oats Meatloaf [5 servings]

2 lbs ground beef
1 cup tomato sauce or ketchup or salsa
3/4 cup Quaker Oats
1/2 cup chopped onions
1 lge egg, beaten
1 tablespoon soy sauce or worcestershire sauce
salt and pepper

preheat oven to 350.
mix all ingreds, put in loaf pan and bake 1 hour.
drain off fat.
