Can anyone tell me how to make fruit scones?
mine turn out really hard and dont rise at all. what am i doing wrong?

This is the ONLY scone recipe I ever use...I have tried many others and they never come out as delicious as these! The recipe calls for cranberries but I have also tried blueberries as a replacement and lemon rind instead of the orange rind. I have also tried them with cherries. you can use whatever fruit you like or just follow the recipe exact...either way they will be great..enjoy!
3/4 cup buttermilk or plain yogurt
1 egg
2 3/4 cups flour
4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter
1 cup coarsely chopped cranberries (fresh or frozen)
1/2 cup sugar
1 orange, rind of
1 tablespoon butter, melted
1/4 cup icing sugar
Preheat oven to 375 degrees.
Beat buttermilk and egg in small bowl and set aside.
In a large bowl, measure flour, baking powder, baking soda and salt.
Cut in butter until mixture resembles small peas.
Mix in cranberries, sugar and orange rind.
Add buttermilk mixture and stir until soft dough forms.
Using your hands, form dough into a large ball and place on floured surface.
Knead about 10 times Pat into two circles about 1 inch thick, place on ungreased cookie sheet.
Score the tops of both circles to make 8 wedges on each, if making for a buffet, for regular scones, score each circle into 4 wedges.
Bake scones for 15-20 minutes.
While still warm, brush with butter and sprinkle with icing sugar.
These quantities make eight to ten scones.
* 2? cups (12 oz, 350 g) self-raising wholewheat (wholemeal) flour (or all-purpose flour with 2? tsp. baking powder)
* 1 tbsp. superfine sugar (caster sugar)
* 1 cup (3? oz, 100 g) mixed dried fruit (raisins, sultanas, currents, etc.)
* 1 egg, beaten
* ? cup (4 oz, 110 g) butter or margarine
* Enough milk to bind the dough (approx. 2 tbsp.)
Oven: Pre-heat to 400F (200C)
Mix all the ingredients into a firm dough. Roll out to a thickness of about one inch (2? cm). Using a pastry cutter or inverted glass, cut into rounds. Transfer to an oiled baking sheet and bake for 15 to 20 minutes, or until just done.
Cranberry-Walnut Scones [12 servings]
1 cup boiling water
1 cup dried cranberries
4 cups flour
1/2 cup sugar
3 Tbsp. Baking Powder
3/4 cup (1-1/2 sticks) cold butter or margarine
1 cup Walnut Pieces, toasted, chopped
1 cup plain nonfat yogurt
1 cup whipping cream
1 egg, lightly beaten
PREHEAT oven to 350°F. Add water to cranberries; stir. Let stand 10 min. to plump cranberries. Meanwhile, mix flour, sugar and baking powder in large bowl. Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs. Add walnuts and drained cranberries; mix well. Add yogurt and cream; stir just until dry ingredients are moistened.
DIVIDE dough into 3 pieces. Pat each piece into 6-inch round on floured surface; cut each into 8 wedges. Place wedges, 2 inches apart, on ungreased baking sheets; brush with egg.
Bake 15 to 18 min. or until lightly browned. Serve warm.
Triple-Fruit Scones:

2 1/2 cups all-purpose flour (or 3 cups flour and eliminate the wheat germ and bran)
1/4 cup toasted wheat germ (see above)
1/4 cup natural bran (see above)
1/3 cup sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
6 tablespoons chilled stick margarine or butter
1/3 cup chopped dried apricots
1/3 cup dried sweetened cranberries
3/4 cup low-fat buttermilk
2 teaspoons grated orange rind
1 large egg
1 large egg white
cooking spray
1 tablespoon sugar
1. Lightly spoon flour, wheat germ and bran into dry measuring cups; level with a knife. Combine flour, 1/3 cup sugar, baking powder, baking soda, and salt; cut in margarine with a pastry blender or 2 knives until mixture resembles coarse meal(I usually do this with my fingers).
2. Stir in apricots and cranberries.
3. Combine buttermilk, orange rind, egg, and egg white; add to flour mixture, stirring just until moist.
4. Turn dough out onto a lightly floured surface; knead lightly 4 times with floured hands. Roll dough into a 12 x 6-inch rectangle.
5. Cut dough into 8 (3-inch) squares using a dull knife or a dough scraper.
6. Cut each square into 2 triangles; place on a baking sheet coated with cooking spray.
7. Sprinkle with 1 tablespoon sugar; bake at 400° for 12 minutes or until golden. Serve warm. Enjoy!
