Does any body have any Norwegian recipes?

for a school project im doing Norway and i need to bring in some type of Norwegian food. it cant be something that has to be refrigerated before eating or served warm. so maybe like cookies or something like that. and it has to be something that two 9th graders can make. links are welcome too, thanks every one

lefse is a really traditional norwegian food...it looks sort of like a tortilla, but is made with potatoes....similar to a pancake or crepe- and is served room temperature. you put butter and brown sugar or jam on it and roll up. yum! my norwegian grandmother made it for every holiday and special occasion when i was a kid. also, in norway, street vendors sell varmepolse, which is a hot dog or pork sausage rolled in lefse with mustard. yum!

the krumkakke recipe below is a lovely dessert, unfortunately it requires a special waffle iron to make which is not that common and may hinder your efforts. all you need for lefse is an electric skillet and a long, flat stick (even a ruler would work) to flip the lefse from the center.

I went into yahoo search and entered Norwegian cookie recipes. Here is a recipe that is repeated on several sights.

Norwegian Cookies

42-48 cookies 25 min 10 min prep

1 cup butter
1 cup sugar
1 egg, beaten
2 cups flour
1 teaspoon almond extract
21-24 maraschino cherries, halves

Mix items together. Roll into balls and cook

heres a recipe for krumkake- a traditional norwegian desert


A Favorite Norwegian Recipe
A delightful krumkake, easy to handle and roll into a cone, yet light and crispy.

2/3 stick butter (5 tbsp.)
2/3 cup granulated sugar
2 eggs
2/3 cup milk
1 cup general purpose flour

Makes about 20 krumkakes
1. Melt the butter carefully in a microwave oven or double boiler. Do not overheat.
2. Thoroughly mix the sugar into the butter, stirring well.
3. Add the two eggs and, with a power mixer, blend the mixture until light yellow in color.
4. Add the milk and flour and continue to blend until mixture is smooth. The batter should flow readily but slowly off a measuring spoon for a thin, yet easy to handle krumkake.
5. Any of a variety of flavorants such as vanilla extract (1/2 tsp.), grated lemon rind (1/2 tsp.), almond extract (1/2 tsp.) or ground almonds (1 tbsp.) may be added to vary the flavor.
6. Using the KrumKake Express?, start with the Color Control Dial at 2-1/2. One tablespoon of batter will make a 5" wafer. Lock the lid latch for a thinner and crispier krumkake.
7. Add batter to the plate only when the green "Ready" light is ON. In about 30 seconds, the red "Baking" light will turn ON.
8. When the green light comes ON again, open the lid of the KrumKake Express? and inspect the krumkake for color.
9. Cook until golden brown and remove promptly.
7. Roll onto the Cone Form quickly while the krumkake is still hot.

Norwegian Drop Cookies

2/3 cup shortening
1 1/3 cups brown sugar
1 egg
1 1/3 cups flour
2/3 teaspoon baking soda
2/3 teaspoon cinnamon
2/3 teaspoon nutmeg
2/3 teaspoon cloves
1 pinch salt
2/3 cup raisins
1 cup walnuts

1. Cream shortening, brown sugar and egg until fluffy.
2. Sift together flour, soda, cinnamon, nutmeg, cloves and salt.
3. Mix with batter.
4. Add raisins and walnuts.
5. Drop by teaspoon on a greased cookie sheet and bake at 350° for 12 minutes.

Norwegian Apple Cake:

1 hour 15 min prep
8-12 servings

1 box yellow cake mix
2-3 peeled and sliced apples
1/2 cup sugar
1 teaspoon cinnamon
1 teaspoon nutmeg

1. Prepare cake mix as directed.
2. Pour into 13 x 9" inch pan.
3. Drop apple slices into batter.
4. Mix sugar, cinnamon and nutmeg together and sprinkle over batter.
5. Bake 45 minutes at 350F degrees.
