Anyone know how to make the mashed potatoes from the outback?
Looking for the recipe for Roasted Garlic Mashed potatoes from the outback steakhouse.

Roasted Garlic Mashed Potatoes
Ingredients:
4 Russet potatoes
2 heads of garlic
1/4 cup unsalted butter
1 cup milk
1/2 cup of buttermilk
1/4 cup extra virgin olive oil
1 tblsp dried thyme
Salt & pepper to taste
Prep:
Peel the garlic leaving the cloves whole. Place them in a shallow baking dish. Drizzle with oil making sure to coat all the garlic. Sprinkle with the dried thyme. Bake at 350 degrees covered for 20 to 30 minutes or until tender and golden brown.
Peel and cut the potatoes into quarters. Boil in salted water for 20-30 minutes or until tender. Meanwhile in a pot heat the milk, buttermilk and the butter. When the potatoes are done drain and return them to the same pot. Add the garlic then add the milk and butter a little at a time while mashing until desired consistency is achieved. Season potatoes with salt and pepper to taste.
I don't know that one....but the loaded mashed potatoes from Applebees I figured out....
mash some potatoes with the skins on....use sour cream instead of milk when mashing.....add some butter, cooked bacon, and cheddar cheese.......sprinkle over the top with more bacon, shredded cheddar, and some chives.....we love it!

Garlic Mashed Potatoes
Ingredients:
2 pounds red or Yukon Gold potatoes
1 tablespoon butter
1/2 cup whipping cream
1/2 cup roasted garlic
8 ounces cream cheese
2 tablespoons chives
Salt and freshly ground pepper
Directions:
Wash potatoes well, peel and quarter. Cook potatoes in boiling salted water until fork tender. Drain potatoes and return to the pot. Using a ricer or a masher, mash the potatoes slightly and set aside ( you can also use your electric beater too). In a saucepan, heat 1 tablespoon of butter and half the cream and simmer for 1 minute. Add contents of the saucepan to the potatoes and stir will. On low heat, stir in the rest of the cream, add the cream cheese and all of the roasted garlic. Finish with chives, salt and pepper.
How to Roast Garlic
Take a head or heads of garlic and remove the cloves. Do not peel the cloves of garlic. Separate the cloves into groups of approximately the same size (usually about 3 groups will do). On medium-low heat and using a non-stick pan,put your first group of cloves in the pan. Let them sit for about 2 minutes, stir, sit for 2 minutes, stir, etc. Keep watch for scorching on the outside of the cloves. If you see scorching turn town the heat a little and stir more often. The garlic is roasted when the cloves are soft when pressed by a fork or spatula. The softer the clove, the more roasted the garlic. The group of larger cloves will of course take longer than the smaller cloves. You separate the cloves so that you don't burn your smaller cloves while undercooking the large ones.
