Answers:
I cook this for my husband a lot, he loves it! If you don't want a lot of fat, use chicken breast instead of chicken thighs!

Ingredients....
2-3lbs Chicken Breast or Thighs
1 box Uncle Bens Brown & Wild Rice Original Recipe
1 can Cream of Chicken Soup
1 can Cream of Mushroon Soup
1 can Cream of Celery Soup
1 Soup can of water
Butter or Margarine
Season Salt to taste

Preparation
Pre-heat oven to 350.
Rinse and deskin chicken (optional)
In oblong casserole dish mix up packaged Rice contents,soup & water. Place Chicken pieces on top and dab each with Butter or Margarine. Season Salt on top of each piece to taste. Cover with foil and bake for 21/2 hrs. Serve with favotire vegetable and enjoy.

stir fry. It's quick easy and healthy!

Thai-Style Halibut with Coconut-Curry Broth

2 teaspoons vegetable oil
4 shallots, finely chopped (about 3/4 cup)
2 1/2 teaspoons red curry paste (I like Mae Ploy brand)
2 cups low-sodium chicken broth
1/2 cup coconut milk
1/2 teaspoon salt, plus 1/4 teaspoon, plus more for seasoning
4 (6-ounce) pieces halibut fillet, skin removed
Steamed fresh spinach
1/2 cup coarsely chopped fresh cilantro leaves
2 scallions, green part only, thinly sliced
2 tablespoons fresh lime juice
Freshly ground black pepper
2 cups cooked Jasmine rice, for serving

In a large saute pan, heat the oil over moderate heat. Add the shallots and cook, stirring occasionally, until beginning to brown, 3 to 5 minutes. Add the curry paste and cook, stirring, until fragrant, about 30 seconds. Add the chicken broth, coconut milk, 1/2 teaspoon salt and simmer until reduced to 2 cups, about 5 minutes.
Season the halibut with 1/4 teaspoon salt. Arrange the fish in the pan and gently shake the pan so the fish is coated with the sauce. Cover and cook until the fish flakes easily with a fork, about 7 minutes.

Arrange a pile of steamed spinach in the bottom of 4 soup plates. Top with the fish fillets. Stir the cilantro, scallions, and lime juice into the sauce and season, to taste, with salt and pepper. Ladle the sauce over the fish and serve with rice.

My favorite fish is tilapia because of the mild flavor. Here is a quick but delicious way to serve fish.

I spread each fish filet with a thin layer of mayo, then some lemon juice, then a thin layer of seasoned bread crumbs, then some fresh Parmesan cheese. Then I bake at 350 for about 12 - 14 minutes depending on the size of the filet. Serve with sliced lemon.

You won't taste the mayo... it's there to keep the filet from drying out .

Chicken or fish can cooked in any way you desire. imagine the item , lets say fish. Imagine in your mind all the spices you have on hand and which ones would be good with it. Lets say ,garlic and ginger and lemon and some nice swwet white wine, a little butter and a touch of lime and mint. Ok place fish in a casseroll dish or large saute pan that it oven proof. now ad the spices and when it comes to the wine cover the bottom of the pan and a little way up the fish Put the butter in chuncks on top and bake in the oven til the fish is firm but not hard or dry. Violla you have created a dish , lets call it mohito fish. now that we have done it together you go ahed and try the next one on your own.
