What's a sauce, or recipe for one, with pinapple in it.?

For fish?


Answers:
Here is a recipe that my mother used to cook for us when we were children, hope you like it, I still make it! Enjoy!

1 lb boneless skinless chicken breasts
2 tablespoons cornstarch
1/2 cup brown sugar
1 - 13 1/2 ounce can pineapple tidbits in juice, drained (reserve juice)
1/3 cup unseasoned rice vinegar
1 tablespoon reduced sodium soy sauce
1/3 cup chopped green peppers
2 green onions with tops, chopped for garnish

Cut chicken into bite sized pieces and stir-fry in a large nonstick skillet sprayed with cooking oil spray. Remove chicken to a plate.
Mix cornstarch and sugar, stir in reserved pineapple juice, vinegar and soy sauce until smooth. Pour into skillet, cook over medium heat stirring constantly until mixture thickens and comes to a light boil. Boil and stir one minute, add cooked chicken, pineapple bits and green pepper. Heat through and serve over rice. Top with green onions for garnish.Serves 4

Pineapple fish sauce.

I like to slice pineapple in about 1/2 inch thick slices and then grill them on each side for a minute or 2.Serve it on the side. Yum-O!

You could puree the pineapple, along with some habanero chilies (some are extremely hot, others are more mild, depending on where they are grown, how they're grown, etc, just choose depending on your taste preferences).. but mix those together, you can add a little bit of sugar if you like, but definately add a squeeze of lime juice, close to a teaspoon, more if you like, and fresh chopped cilantro. this sauce will do well on fish, like seabass. enjoy!

GRILLED FISH IN PINEAPPLE CILANTRO
SAUCE WITH EQUAL

1 can (20 ounces) sliced pineapple in juice, drained, reserving juice
3/4 cup reserved pineapple juice
2 tablespoons lime juice
2 cloves garlic, minced
2 tablespoons water
1 tablespoon cornstarch
2 tablespoons minced fresh cilantro
1 to 2 teaspoons minced jalapeno pepper
2 tablespoons Equal? Spoonful*
Salt and pepper to taste
6 salmon, haddock or halibut steaks or fillets (about 4 ounces each), grilled

Cut pineapple slices into 1/2-inch pieces. Combine pineapple pieces, reserved pineapple juice, lime juice and garlic in medium saucepan. Heat to boiling. Reduce heat and simmer uncovered 2 to 3 minutes.
Combine cold water and cornstarch. Stir into boiling mixture. Boil, stirring constantly, until thickened. Remove from heat. Stir in cilantro and jalapeno pepper.

Stir in Equal?; season to taste with salt and pepper. Serve warm sauce over fish.

try this:
1 can pineapple tidbits,
small amount of water,
1/2 cup sugar,
cornstarch,
water,

first add the pineapple and half of a can of water to a saucepan.(the can is the left over pineapple can.) bring to a bare simmer and add sugar, cook until the sugar is dissolved. mix the cornstarch and water in a separate container according to the cornstarch package directions. then add this to the rest of the mixture until it thickens. this is a sweet sauce that is good for fish, chicken, and ham. if you don't like this email me and I'll give you a recipe for a pineapple salsa you can top the fish with.
