INGREDIENTS:
2 cups all-purpose flour
2 cups granulated sugar
1/2 teaspoon salt
1 teaspoon baking soda
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
3 eggs
1 1/2 cups vegetable oil
2 cups finely grated carrots (about 3 to 4 medium carrots)
2 teaspoons vanilla extract
1 can (8 ounces) well drained crushed pineapple
1 cup shredded coconut
1 cup chopped walnuts or pecans, divided
PREPARATION:
In a mixing bowl, combine dry ingredients; stir to blend. Add eggs, oil, shredded carrots, and vanilla; beat until well blended. Stir in pineapple, coconut, and 1/2 cup of the walnuts. Pour into a greased and floured 13x9x2-inch baking pan.
Bake at 350° for 50 to 60 minutes, or until a wooden pick or cake tester inserted in center comes out clean. Place cake in pan on a rack to cool. Frost the cooled cake with cream cheese frosting and sprinkle with remaining chopped nuts, pressing into the frosting very lightly.

For the cake:

4 eggs

For the frosting:
1/2 cup (1/2 stick) butter, softened
1 (8-ounce) package cream cheese, softened

1 teaspoon pure vanilla extract



Preheat oven to 325 degrees F. Grease and flour 3 (8 or 9-inch) cake pans.
For the cake:
Mix together the flour, cinnamon and sugar in a large bowl. Add the remaining ingredients and blend well with a handheld electric mixer for about 2 minutes. Pour batter into prepared pans. Bake for 25 to 30 minutes, or until golden brown. Allow to cool in pan for 5 minutes. Invert onto lint-free dishcloth, or waxed paper, and allow to cool completely.

For the frosting:
Mix all ingredients with handheld electric mixer and blend until smooth and creamy.

Frost layers, top, and sides of cooled cake.

you bake a carrot cake the same as any other cake. most likely at 350 for about 45 minutes or until done. to see if a cake is done, you stick a fork in the middle and pull it out. If the fork has crumbs on it, then it is not done. when the fork comes out clean, then the cake is done.

Since I don't know what ingredients you have, I'm just giving you a link to a carrot cake I've tried. If you don't have any grater at all, just use 1 more jar of baby food.

Yes, I prefer using actual carrots, but I lived in very small kitchens and didn't have room for graters so use the baby food version.

You make the batter and put it in a greased pan and bake in the oven (not microwave) at 350 degrees for 45 to 50 minutes or until you can put a sharp knife in the middle of it and it comes out clean.
